Fantastic visit to Goodyear Arizona…5 days and counting…

The hour-long drive passed in no time at all, with five of us riding in Margie’s car while Tom drove. He drank only iced tea all day to ensure he could be the “designated driver” on the return drive after dark.
 
Laurie and Craig’s stunning house was a delight to see. Every room is exquisitely designed and decorated, and we oohed and aahed as we took the tour.

Afterward, I asked Tom if this gorgeous home reminded him of the beautiful home we’d left behind over seven years ago and if seeing this home caused him to wish we had never left our old life.
 
He laughed and said, mimicking my feelings, that it’s a pleasure to see Laurie and Craig’s home and admire every nook and cranny, but in no way did it make him wish we had a home and a different life. We both concurred that we were thrilled for them and their apparent success but didn’t feel an iota of longing.

Not only was the house exquisite, but the hosts had gone over the top to prepare a delicious meal consisting of many pre-dinner snacks, most of which I could eat, and smoked baby back ribs and chicken prepared on their outdoor smoker.
 
Craig kept aside a portion of ribs and chicken for me without the sweet sauce he added at the end of the roasting period. The rich smells of smoking hardwoods wafting through the air, leaving all of us looking forward to partaking in the delightful offerings.
Fifteen attended the barbecue, including some friends.
The beer, wine, and drinks flowed along with the conversation among the 15 of us, four of which included friends of the family while Tom faithfully sipped on his iced tea. 
 
The weather couldn’t have been more perfect at a sunny 74F (23C). We dined at both the indoor and outdoor tables. Once darkness fell when it continually cools off considerably in the desert, we all wandered indoors to continue our lively conversations.

We’d arrived a little after 1:00 pm, and by 8:00 pm, those of us heading back to Apache Junction piled into the two vehicles and were on our way back to Apache Junction, arriving a little after 9:00 pm.
 
We didn’t continue the party as late as it was, and each headed back to our respective “park models” to spend a quiet remainder of the evening. Later today, we’ll all get together to play cards at Colleen’s home.
 
Soon, I’ll head out to the bank to get cash and a quick trip to the grocery store for a few items to hold us until we depart in a mere five days.

Third cruise in and around Japan…10 days and counting…

Saturday was yet another fun day and evening. Around 4:00 pm, we grilled New York steaks on the grill at Colleen’s home. I’d brought a salad and broiled the butterflied garlic shrimp under the broiler in her oven.

Colleen made potatoes, gravy, and garlic bread, and a fantastic dinner, sitting inside at two tables for the eight of us, away from bees on the patio.

After dinner and cleanup, we started yet another round of Buck Euchre, but we set up two tables this time, and most of us played for hours. There was endless laughter, teasing, and banter among all of us. 

This morning was relatively uneventful. I prepped everything for tonight’s dinner, which we’ll have some time during the football games. By 9:30, I was fading and headed back to our place to unwind and relax. Tom joined me around 11:00 pm, and by midnight we were fast asleep.

By 1:00 pm, Tom was settled in front of the TV to begin watching the NFL football playoffs. With little interest in teams other than the Minnesota Vikings, who now are out of the running, I kept busy doing laundry and other household chores.

Today is a good day for me to research our future travels. As we’ve lined up these three cruises in Japan, Southeast Asia, and the South Pacific, it gives us a point from which to backtrack for locations that appeal to us before the cruises in 2022.

This week will be busy. Tomorrow evening I meet with friend/reader Staci in Mesa for dinner. On Thursday, all the family is driving an hour to Tom’s niece (Mary and Eugene’s daughter) Laurie and her husband Craig’s home in Goodyear, Arizona, where we’ll all spend the day.

No doubt, in between, there will be more “happy hours” celebrations in the neighborhood as we wind down our time in Apache Junction. And, before we know it, we’ll be completing our packing to be on our way to India.

A year ago memories…That never happened…

As I read the year-ago post, I felt a little melancholy. It was a post about how we assumed we were leaving in one month on February 15, 2019. See the post here.

We were getting ready for an upcoming birthday dinner party for our friend Rita (husband Gerhard), whom we’d met from our site, who ended up living in the same house in Marloth Park where we’d lived for three months in 2013/2014. 

They rented the house when our site-directed them to Louise, our dear friend and property manager who’d rented the Hornbill House to them and us, and then four years later rented the Orange House to us. 

Rita and Gerhard became friends fast enough to host Tom’s birthday party on December 23, 2018, and reciprocate joyfully. We decided to host Rita’s birthday party several weeks later. 

The same wonderful group of friends was coming to the party. Linda and Ken from Pretoria were coming to stay with us for a week, adding to the excitement and fun.

In the interim, we were all headed to Tambarina Restaurant for dinner that night for the first celebration of Rita’s birthday. We all loved a reason to celebrate, and then again, we didn’t always need a motive other than the pleasure of sharing time.

Kathy had arranged a going away “girl’s day” for me on February 5th to include pedicures and lunch. That never happened.

Kathy and Don were hosting a going away party for us on Friday, February 8th. That never happened.

The next night on February 9th, our last Saturday night in the bush, we were all getting together for dinner at Jabula. That never happened.

Leaving for Kenya for a fantastic tour and numerous safaris was on the schedule, with our intended departure date on February 15th, the day our visas ended. That never happened.

Eighty-four days later, we were supposed to be in Minnesota. That never happened.

On Friday night, February 8th, after the heart disease diagnosis with the subsequent emergency open-heart surgery scheduled for February 12th, Kathy and Don invited all of us for dinner at their house. I’ll never forget that night when we all sat around the fire in their garden, sharing stories and our deepest feelings.

The next night, February 9th, we all met again for my pre-surgery dinner party. It was a bittersweet evening with loving friends. I’ll never forget these times with heartfelt gratitude and devotion.

So, reading yesterday’s post reminded me of all of these events, which will permanently be emblazoned in our hearts and minds, grateful for our friends and for Dr. Theo, who discovered my condition on a hunch.

Yes, as we look forward to heading to India in 15 days, we’ll never forget what we’ve left behind and prayed for the days we’ll all be together again.

Recipe request from many readers…More fraud on one of our credit cards…

After yesterday’s post and mention of our dinner last night, we had many requests for the recipe. I must mention this high-fat recipe is only recommended for those on a keto or low carb diet, having converted their bodies from burning sugar for fuel instead of consuming sugar-inducing foods such as sugar, fruit, wheat, and other grains and starches. (More on this way of eating here).

We both decided to resume intermittent fasting several days a week to aid our health as described here, which may be highly effective in maintaining health and losing weight. These two means are effective for many health conditions, including heart disease, as described in a Harvard study.

(Please keep in mind, we are not providing medical advice nor recommending you eat this way. Please check with your physician before starting any new health regime or diet).

Many, who have been following us all along, may wonder, “If these ways of eating were so effective, how did I end up with the cardiovascular disease and the subsequent bypass surgery?”

The doctors in both South Africa and the US explained that I’d had hereditary CVD for 30 or 40 years, long before I started this way of eating. Also, I exercised all of my life. They stated that my low-carb diet and exercise most likely prevented me from having a fatal heart attack. 

Also, this way of eating and exercising prevented me from having type 2 diabetes, another hereditary condition. Before I started eating this way, my blood sugar was construed as pre-diabetic. Surely, by now, I would have been on medication.

Everyone has to make decisions that work best for them based on many factors, including heredity, lifestyle, sleep patterns, and stress. When my children were young, and I was a single parent with two young sons, owning a stressful business with no child support being paid, my life was exceedingly stressful. 

At that time, I drank caffeinated beverages all day to maintain a certain level of energy. However, I exercised all of my life and, at that time, consumed a low-calorie, low-fat diet. This, coupled with my bad genes, was highly instrumental in my developing severe cardiovascular disease.

I began this way of eating in 2011, and there is considerable information here on our site. If you type in ‘”low carb” into the search box on the right side of our home page under the word “Search” located below the advertisers, you find many posts on this topic.

Today is a busy day, taking care of financial matters. We had another credit card number used fraudulently. That’s two-card numbers stolen since we arrived in Arizona. Go figure. This is more fraud than we’ve experienced in any other country. We’re awaiting the new card in the next few days.

The Minnesota Vikings continue to disappoint…Social evening softens the blow…Prescription drug error…

Yes, we were sorely disappointed by the Minnesota Viking’s loss yesterday afternoon. The playoffs and the season are all over for them until next season, when preseason games begin in August and the regular season in September.

Tom watched the game with the boys at Colleen’s home while I stayed behind at our place, continuing to work on more of the contents of our package that arrived on Friday night. A year’s supply of my three prescription drugs had to be popped out of the plastic packs and placed into bottles with my name and prescription on the label. 

Carrying loose pills in those plastic containers asking for trouble. The medications could cause a real issue if stopped at security, as we discovered early on in our travels.

Also, I’d ordered several bottles of supplements suitable for the cardiovascular disease instead of taking statins, a decision I made many months ago. As mentioned, Tom and I went through the vitamin bottles consolidating as much as we could while leaving them in the original bottle.

In the process of going through the newly arrived prescription drugs, I noticed that the bottle of thyroid medication I’d been prescribed while in the hospital (when I was running out before the surgery) was for the wrong dose, .25 mcg as opposed to .75 mcg. 

My new prescription was for the correct amount of .75 mcg. Subsequently, I’d been taking ⅓ of my previously required medication. After all, we’d been through, I never looked at the tiny print on the bottle, but I did notice the pills were round, not oval. 

Since many drugs look different from country to country due to a variety of generic drugs, I didn’t give it another thought…not until yesterday, and then I understood why, after all this effort to feel 100% failed in part by not taking the appropriate dose of this vital drug.

Subsequently, I’ve had typical symptoms of hypothyroidism which may be found here. I wondered why I gained weight over the past year (15 pounds) and have been unable to lose it as I’ve always been able to do it easily. Also, it explains why I’ve had a hard time getting up in the morning, staying in bed until 8:00 am or later.

This all makes sense. I was always the early bird, along with Tom, bolting out of bed at 6:00 am, ready to tackle the day. Today, I took the first correct dose, but it takes about a month to see an improvement.

In India, I’ll continue to eat a healthy diet of mostly fish, chicken, and vegetables, and of course, we’ll be walking a lot while on tours over the next several months.

A few days ago, we received our final itinerary for our almost two-month tour in India. We were able to check the menus at the various hotels. Neither of us will have a problem based on these menus. 

The hotels are four and five stars and appear to have excellent, highly rated restaurants. No beef, of course, but plenty of other meat options that will work for both of us. Tom doesn’t eat lamb, a popular item on their menus, but he occasionally eats fish and chicken. We breathed a sigh of relief.

Last night, after the game, Tom returned. I sliced the remaining roast beef we’d cooked the previous night, reheated the huge pan of mashed potatoes, cooked green beans, and made a salad, all of which we loaded into the car and brought back to Colleen and Gene’s home.

The seven of us gathered around the big kitchen, eating our reheated leftovers that everyone seemed to enjoy. We had a great time! The conversation was lively as always, with many funny stories flying around the room.

This morning I made a favorite low-carb hamburger casserole with a big salad for tonight’s dinner. We’ll stay in while Tom watches more football today, and tonight, we’ll stream a few shows we’ve been watching.

The challenges of dining out in Arizona…Ultimately, weather-related reasons…

When we visited friends Kathy and Don in Pretoria, South Africa, one year ago, we visited this monument, the Voortrekker Monument, an unusual-looking structure located in Pretoria, South Africa. When I walked up all these steps (not all steps we tackled are shown in the photo) without getting out of breath or having any health issues. A little over a month later, I had open-heart surgery with three main arteries 100% blocked. Who knew? For more photos from this date, please click here.

Let’s face it, many of the patrons of restaurants in the area are seniors, based on varying stats online from several sites, none of which I will quote based on this variable.

But, overall, it appears approximately 25% or more of the population of Arizona consists of “snowbirds,” those who migrate to the state during the colder winter months from other parts of the US and other countries.


Some have moved here to live year-round, even with the sweltering summers in the Arizona desert. Some have chosen to live in cooler summer temperatures, such as stated here from this news article at this site:

“When the temperatures heat up in the Valley, many head north to escape the heat, but where is the coolest place to go?

Let’s start with a popular destination, Flagstaff. On average, in July, the afternoon high temperatures are 25 degrees cooler compared to Phoenix. In perspective, the average high temperature in Phoenix during July is 106 degrees, while Flagstaff comes in at a cool 81 degrees. 

While Sedona is also a popular place to escape the heat in the Valley of the Sun, it is on average only about 10 degrees cooler compared to Phoenix.
So where is one of the coolest places in Arizona to go to escape the heat? That would be Greer, coming in with an average high temperature for July of only 76 degrees! 

That is, on average, 30 degrees cooler than Phoenix.
Here are a few other northern Arizona locations, along with their average high temperatures during the month of July:

It’s no wonder that most seniors who purchase or rent homes live in Arizona during the cooler winter months. Subsequently, a tremendous number of seniors dining out on any given day/night of the week.
Since we arrived here a month ago (as of tomorrow), we’ve only dined out during lunchtime or by 3:00 pm. These times were busy but not outrageously so.
At 4:30 pm, the seven of us arrived at a popular Italian restaurant, Babbo, located about 10 minutes from here in Mesa. As soon as we walked in the door, we knew we’d have a long wait. People were lined up outside, 90% of whom were seniors, dining out early as most seniors seem to prefer.
Also, seating a table of seven would be tricky when tables would have to be set up specifically to accommodate our small group when most tables and booths were for four diners.
It made no sense to leave to go to another restaurant, since, if the food was good as it is at Babbo, we’d encounter the same scenario at other restaurants mostly attended by seniors. (No reservations are allowed unless made 24 hours in advance which we hadn’t done).
We waited patiently for 45 minutes until we were seated, with our eyes on a table of eight that were eating, hoping they’d leave soon. At such a busy place, it appeared patrons dine and leave shortly thereafter rather than remain in idle conversation.
The smells in the restaurant of freshly baked bread and Italian spices sent me to the moon. But, ahead of time, I’d scoured their online menu to find they had many suitable full meal dinner salads that would work for me.
I ordered a steak and blue cheese salad with walnuts, roasted peppers, and mushrooms. It was delicious. Tom had spaghetti and meatballs, which he seemed to enjoy, along with the warm crusty bread served with dipping oil. The sisters and spouses enjoyed their meals as well.
As busy as the restaurant was, the service was excellent. In no time at all, we forgot about our long wait. By 6:00 pm, we were out the door heading back to the resort.
We spent the evening back at our place, watching a few downloaded shows, relaxing, and later getting a good night’s sleep.
This morning, after receiving a few email messages from the law firm in South Africa, we reviewed the documents, signed as indicated, and asked how we’ll pay for the guaranteed maximum fees. With the time difference, we won’t hear back until tomorrow.
Today is another low-key day. I’ll do my usual walk, and this evening, we’ll cook bone-in chicken breasts on the grill. Yesterday was a blissfully 72-degree day but today, it’s in the 50s and 60s, a little cool to spend much time outdoors.

Happy birthday to my husband Tom…A special celebration on the menu…

It’s a delightfully busy morning as I continue to prep today’s dishes for Tom’s birthday dinner party starting at 4:00 pm today. Yesterday, we posted the menu. If you missed it, please click here.

Thank goodness I managed to get all the chopping and dicing done yesterday. Although the menu is uncomplicated, it still requires tremendous preparation to pull it all together.

All I have left to do today is broil the garlic shrimp, broil the garlic bread, cook the sauteed Portobello mushrooms, bake the potatoes, toss the salad and wrap up the cake, which has been baked and is awaiting the finishing touches. It will be an easy day.

Yesterday we squeezed all the lemons for the Lemon Drop Martinis, and soon I’ll add the sugar and wrap up the mix to which our guests may add either gin or vodka, which I’ll whir with ice in Mary’s borrowed blender.

With limited space, I can’t set the table until it’s time to eat. We’re borrowing a table from Mary which, as it turns out, we’ll have to set up indoors. It’s a very cool and cloudy day with possibilities of rain requiring we eat indoors.

Tom will cook the already marinating New York Strip steaks to order on the grill while getting the remaining dishes ready to be served. No stress here. I’ve always strived to make dinner parties seamless by avoiding being in an uproar for any part of it. 

Nothing stresses guests more when they see their hosts scrambling in an attempt to get the meal put together. We’ve strived to avoid such a scenario preferring our guests can relax and enjoy their time at our party.

I am overflowing with love and gratefulness for my husband. This morning I wrote a tribute to him on Facebook as follows, which says it all:

“Happy birthday to my husband Tom, my travel companion, friend, and forever lover. You always have been a loving and thoughtful partner, but this past year you further proved the “stuff” you are made of when you took care of me for many months while I recovered from open-heart surgery in South Africa and after that. Your love and devotion came through every day and continue now that I am well. This photo was taken when we were in Tanzania in the savannah. Now, my dream life continues with the man of my dreams when in 37 days, we depart for two months touring India. Happy birthday, my love. I love you always…”

Our goal is not to “toot our own horn” here if possible. Still, today I couldn’t help but remind Tom and our readers how fortunate I feel, we feel, to have one another, to be living this extraordinary life, and, most of all, to continue after this trying year.

But, this year is significant when we have the opportunity to share it with a part of Tom’s family; three of his six sisters, two brothers-in-law, and each other is usually warm and sunny Arizona.

Prepping for Tom’s birthday dinner…Here’s the menu…

Tomorrow’s birthday dinner for Tom is the first big meal I’ve made for guests in over ten months. When deciding on the menu for his birthday dinner tomorrow, I found it necessary to consider several factors: one, the limited space in the kitchen; two, that the various dishes are easy to prepare; Tom’s taste preferences (along with our guests); and limited space for serving a variety of side dishes.

While at the market last weekend, we noticed reasonable prices on New York Strip steaks. They looked meaty with little visible fat, and although the portions are significant, everyone can take a “doggy bag” home if they’d like.

We purchased two packages of five steaks each and separated the seven we’d need for the meal, keeping three for the two of us at some point in the future and freezing all of them. Steak on its own may not be all that exciting for some, so we also purchased a bag of jumbo butterflied prawns. 

Each plate will have a steak and prawns. Thus, the menu rolled out as follows:

  • New York Strip steaks, cooked to order on the grill
  • Jumbo garlic broiled butterflied prawns
  • Baked potatoes with sour cream and fresh chives
  • Asian green beans with light spices, bacon, sauteed garlic, and onion
  • Sauteed Portabello mushrooms
  • Par 30 Salad: a delicious tossed salad from a recipe, in our old lives, from a restaurant on at a nearby golf course. Romaine lettuce, green onions, bacon, slivered almonds tossed in a slightly sweet and tangy homemade dressing
  • Garlic bread, topped with fresh garlic and Parmesan cheese
  • Tom’s favorite lemon cake, infused with vanilla pudding, crushed pineapple, and topped with Cool Whip
The items on this menu that work for me are steak, prawns, green beans, mushrooms, and salad. This is an ideal meal for me and hopefully for everyone else.

We’ll dine by 4:00 or 4:30 pm due to a Vikings game on TV starting at 6:15 pm. All of us, from Minnesota, will watch the game. We have enough chairs and seating to make this work for the seven of us. 

I’ll likely serve the cake at halftime or sooner when everyone’s ready for the final course. I’ve always loved this cake, so I have to remind myself not to lick my fingers or take a single taste.

I decided against serving any snacks or appetizers before the meal when all it does is make everyone complete before the dinner is served. It isn’t enjoyable for the cook to find guests already complete before the main meal is served. And, it’s hard for the guests who wish they had “room” to eat the main meal. 

Today, we took off for the Safeway market for a few last-minute items while drying our laundry. We were back in time by a few minutes before it was done. Returning to the house, we put all the laundry away, and I started chopping and dicing for tomorrow’s meal.

Soon, we’ll juice all the lemons for tomorrow’s Lemon Drop Martinis. We picked all the lemons from Mary and Eugene’s lemon tree in front of their property. Colleen provided a bottle of Sapphire Gin and a bottle of Absolute Vodka to use for the martinis.

After our 3:00 pm main meal today: roast chicken, salad and rice (for Tom) he’ll vacuum all the floors and I’ll wash them. This morning I did some cleaning, so we’ll be all set by the end of the day as I continue to work on the above side dishes. I’ve already finished the green beans and will continue to chop and dice for the salad.

First thing in the morning, I’ll make the cake, marinate the steaks, prep the prawns, potatoes, and garlic bread. I’m doing as much as I can today to ensure tomorrow is easy.

Hopefully, the day will be as warm and sunny as today, with a high of 72F (22C). May you have a warm and sunny day as you plan and prepare for the holiday season.

Planning Tom’s birthday party on the 23rd and holiday festivities…

 

Photo from this date in 2013: Of nine members of this warthog family, there are two moms; one with four babies and three babies.  From watching this family almost daily over 18 days, we believe the mom shown above is the mom of the three babies, which, if you look closely, are all nursing. (It’s hard to see the third).  Thus, the baby on which she is resting her chin belongs to the other nearby mom and seems comfortable with this situation.  We couldn’t have laughed more when the fourth baby provided this neck resting spot, whether hers or not. With Tom’s birthday party in only four days, we’ve begun planning how we’ll seat seven people for dinner in our tiny house. We have four chairs inside, two at the dining table, and four chairs outside, which we can bring in as needed. 

The outdoor table has a glass top, and it would be impossible to bring it inside. If the weather isn’t too cold, we could eat early outdoors, getting the inside table and chairs outdoors. 

The weather forecast predicts 69F (21C) on Monday. Usually, it’s warmest here between 3:00 and 4:00 pm. With the Minnesota Vikings game on at 6:15 pm, it should work well if we eat around 4:00 pm and have “birthday cake” during halftime. 

An easy dinner is planned to avoid spending too much time in the tiny kitchen. Tom will cook on the gas grill while I wrap up the sides indoors. We only have six plates and salad bowls, so we’ll borrow one more of each from the sisters to round it out to the seven of us.

Today, we’ll walk down to Mary and Eugene’s place to pick lemons off of her overflowing lemon tree to make lemon drop martinis as we’d made last year at his birthday party, hosted by Rita and Gerhard. We’ll borrow a blender from Mary and a juicer from Margie as well.

My grocery list is complete, and we’ve already purchased the meat and ingredients for the dessert. A quick trip to the market will wrap it up, which I’ll do over the weekend or perhaps tomorrow to avoid some of the Christmas rushes.

On Christmas Day, Mary and Eugene are having a traditional turkey dinner. I will make the side vegetables and possibly a few pies. No doubt, the festivities will be delicious and festive.

Christmas is less about gifts, decorating, or a Christmas tree, which we haven’t done since we began traveling. It’s never made sense living all over the world, nor would be willing to accumulate “stuff.” We send gifts to the grandkids but had mutually agreed long ago not to purchase gifts for the adult kids.

We aren’t particular about Christmas Eve yet. Typically the family goes to a local establishment for drinks and light meals. Surely, we’ll join them this year. And, we’re planning to go to Christmas Eve Mass at a nearby church which starts at 8:00 pm, instead of midnight.

There are many seniors in this area, and Midnight Mass would probably be poorly attended. Let’s face it; most seniors go to bed reasonably early, making midnight a little late for most of us.

Yesterday, at 4:00 pm, we attended the pot luck mulled wine party at the clubhouse. I’d make a double batch of artichoke dip with Club crackers. We had no idea how many would attend, so I assumed a doubt batch would be best. 

Much to my surprise, the mulled wine was delicious and made without sugar. As it turned out, the huge hot pan of the dip was consumed in no time at all, along with all the dishes others had brought along. With the chilly weather, it was a welcomed treat to stay warm.

Unfortunately, we’d forgotten to bring a camera or phone with us for photos. It would have been great to share photos with at least a few hundred people in attendance and live music. Sorry about that!

In any case, Tom’s birthday and the holidays will be meaningful and fun while we’re here in Apache Junction. May all of our readers who celebrate have an excellent time planning their holiday festivities.

Cold in Arizona this morning…Off to see old friends…Tom’s birthday…Wine shopping…

This morning we awoke to 39F (3.9C). The Phoenix and surrounding suburbs are known for warm and sunny winter weather, but it’s not unusual to occasionally see temps as low as this. It only takes a few minutes to heat the entire unit in this tiny house, which we did immediately upon awakening.

After the chill in Minnesota only weeks ago, this is undaunting to us. When we arrived in Minneapolis on November 8th, the temps were well below zero for several days. That was tough to handle, especially when we were still coughing and feeling unwell.
This morning we’ll get on the road by 11:00 am to drive to the Tonto Verde Golf Club in Rio Verde, about an hour’s drive from Apache Junction to meet old friends Vicki and Jerry for lunch at 12:30 pm.

We only met them once in 2015, on the beach in Kauai, Hawaii, while the four of us hit it off so well. We’ve stayed in touch all these years via our posts and email messages sent back and forth. We are looking forward to seeing the two of them.

We are fortunate to have met so many fine people over the past seven years of world travel. Now, it seems everywhere we travel. We have new friends we’ve made on cruises and via our website that we’d like to see face to face. Having the opportunity to visit with these fine people makes our lives all the more meaningful.

I’ve made a grocery list for Tom’s upcoming birthday on December 23rd, one week from today. With the family members attending his party, there will be a total of seven of us. On his birthday, I will post the menu.

Tom’s sisters have lemon and orange trees in their yards. Maybe I’ll make lemon drop martinis for Tom’s birthday!

With this small kitchen, we’ve decided to cook on the grill. He’s asked for one of his favorite cakes, a lemon concoction, an old recipe from my mother’s many moons ago.

As mentioned in the past, I’ve been thoroughly enjoying drinking red wine after a 20-year hiatus during which I didn’t drink at all. There was no particular reason I quit drinking in the ’90s, but somehow I lost the taste for it. Instead, I always drank iced tea on most social occasions.

While on the cruise for 33-nights that circumvented the entire Australian continent, we finally qualified for complimentary drinks during “happy hour” from 4:30 pm to 8:00 pm.

During this period, while socializing with extraordinary Australians and Americans we met aboard the ship, I experimented and had a few glasses of red wine. My tolerance was minimal, and I could barely get through one glass. 

Of course, as time passed, I could pace myself to have two glasses spread over the 3½ hours eventually. After the happy hour ended, I’d switched to mineral water and be perfectly content.

After the open heart surgery, both the cardiologist and the surgeon suggested that drinking red wine in moderation may benefit the cardiovascular system. 

Now, I monitor how much I drink and strive to stay within the criteria. In the process, my taste buds have re-ignited, and I’m on a mission to find the wine I most enjoy.

In this process, organic wine seems to suit me best with little or no sulfites in organic wine, and the fact that no pesticides or chemicals are used in growing the grapes organic wine is particularly appealing.

While in Minnesota, I discovered Total Wine, a national wine superstore, the only location to purchase a variety of organic wines. Although wine is now available in grocery stores in most states, I’ve yet to find more than one or two options for organic wine in any grocery stores we’ve visited in Minnesota, Nevada, or Arizona.

Last night, I placed an order online for a case of organic wines, and later today or tomorrow, we’ll pick it up in Gilbert, Arizona (only about 20 minutes from here) since it’s ready for pickup. The convenience of placing the order online as opposed to searching through the hundreds of types of bottles of wine in a store is something we appreciate.

This is all new to us. In most countries where we’ve traveled in the remote areas we prefer, such convenience is unavailable. I must admit that amenities such as this, which we’ve only found in the US, are pretty unusual to us. 

A lot has changed in the past seven years. Funnily, it’s almost as if we’re the ones experiencing “culture shock” when we find so many conveniences while in the USA. As we’d done years ago, everyone takes such ease-of-use situations for granted. For us, we’re like “kids in a candy store,” eyes wide in awe of what is now available in the US.

But soon, that will all change again as we head to India, where we’ll adapt to the differences which will be profound in that country. We’re ready for this high level of adaptation over the two months.
