We made it to Placencia Belize, bumpy road and all…

A few years ago, I had trouble going to a Minnesota Twins ballgame, the ride in the car, sitting in the bleachers, the stairs up and down.  I was falling apart.  Now, less than two years later, I’m hauling my share of carry on bags, up the steep steps to the second level of the tender for a 30 minute bouncy boat ride in choppy waters from where the Celebrity Equinox anchored out at sea, too large to dock at the pier.

Thank goodness for discovering that food played a huge role in my chronic pain syndrome, now all but gone, making it possible for me to be a participating partner in our upcoming years of world travel.  For this, I am very grateful.

However, my newer state of being doesn’t diminish my persistence in getting things done and getting them done right.  This morning, still on the Equinox, with all of our bags packed and ready to go down to deck two to await our departure on a tender, we waited to hear from the Celebrity’s Immigration Officer, Jennie.

Her objectives, after my careful instructions were to accomplish a few things:
1.  Acquire visas for us for at least the one month Belize offers with the availability of applying for the remainder of our stay.
2.  Get us and our bags safely off the ship on time to meet our private shuttle driver Abraham at our prearranged 12:30 PM at ship terminal #2 who’d be waiting for us holding a sign with our name, to begin the four hour drive to Placencia to our awaiting little beach house.
3.  Avoid us standing in a lengthy line behind all the passengers who were going on excursions in Belize City and avoid all the passengers waiting for us to get our luggage loaded on the tender.  Passengers didn’t have luggage, just purses and bags to carry the loot they’ll purchase on shore. 

We each had heavy computer bags, Tom’s two-liter duty free bottles of booze, bottles of water for the road trip, my overloaded handbag and a heavy bag with all of our prescriptions and preventive medicines that I always keep in my possession.

While I was at the guest services awaiting our stamped passports Tom was upstairs in our cabin on Deck 10 lining up the luggage for the soon-to-arrive porter with a cart to take it to the tender boarding area.

If timing went as we’d planned, we’d be at Terminal 2 in Belize City to meet driver Abraham promptly at 12:30, head directly to the Fed Ex office to return the XCOM Global MiFi to San Diego and begin the long drive to Placencia.

At 11:30,  Jennie frantically arrived at the desk to tell me our passports were approved by the Belizean Immigration Officer who had come aboard at 10:30 and we were set to go.  She handed over our two passports, wished us well and dashed off. 

Still standing at the desk, I knew I’d better check the passports. The visas in both of our passports read:  6/2/2013.  In US speak that means, June 2, 2013. In Belizean speak that means, February 6, 2013. He’d only approved one week!!! Now what? I took a deep breath.  Stay calm, I hollered at myself in my head.  Summoning a guest service rep to go find Jennie again, I waited impatiently another 10 minutes. 

Showing her the dates on the passports, she became embarrassed and flustered, mumbling something about the Belizean Immigration Officer having gone to eat at the ship’s buffet.  In a firm but diplomatic voice, I asked her to please go interrupt his breakfast kindly asking him to extend the visa to 30 days, giving us ample time to apply for an extension by mail while in Placencia. 

Aware of the clock ticking, Tom appeared at my side, ready to head down to Deck 2 to our awaiting bags and to board the tender.  Moments later, Jennie appeared again with the passports in hand, showing us that she had in fact, interrupted his breakfast as he gave us the 30-days visas.  Off we went down to the gangplank and boarding area to about 100 passengers in line waiting to board the next boat. 

Asking Tom to get out our two “Priority Tender Passes” only to discover moments later that most passengers in line also had a “Priority Tender Pass.”  Oh, how I had thought we were special!  Ha!

By now, it was noon. Surprisingly, the line moved quickly as passengers swiped their “SeaPass” ID cards into the slot.  As we moved up the line, I started asking staff personnel about our luggage. “Where did they put our luggage?”  No one answered until we reached the point of swiping our cards in the machine. 

A loud siren started blaring as soon as my card was read.  The same happened to Tom.  We were immediately whisked aside to curious onlookers who were trying to assess our “crime” only to discover that they were being alerted to the fact that we were getting off the ship and not coming back.  Steps away from boarding the tender we were approved to depart after a phone call was made.  

I continued to ask about our luggage.  “Where is it?”  I harped again trying to sound friendly.  Tom had already reminded me about my persistent manner to avoid coming across as “the ugly American” making endless demands.

“Is someone watching it?” I asked.

“Yes, madame, it’s in the hands of Celebrity personnel.” he reassured us.  We boarded the tender hauling our multiple carry on bags to that second story when we barely found two seats next to one another. 

Squeezed between several passengers, a lively conversation ensued with the passengers around us, fascinated that we were getting off the ship to stay in Belize for over two months.  I appreciated their enthusiasm but my mind was on the luggage.

Finally I relaxed to enjoy a lovely woman sitting next to me, a world traveler from Germany, an archaeologist.  The 30 minute ride flew by, wind and sea spray splashing around us in the open air boat as we chatted on about science, paleontology and the caveman.  Quite interesting!  I could easily have spent hours with her. 

Exchanging business cards, we promised to stay in touch via email as she was very interested in reading our blog as I was interested in hearing more about her family winery in Bordeaux, France.  As she dashed away, she threw her head back to shout to me, “Come to visit us at our winery in Bordeaux.”  Whether said flippantly or sincerely, I momentarily relished in the prospect of spending time at her family owned winery.

Moments later, we were being herded off the tender all the while looking for our multiple orange bags.  After a lengthy walk on the dock, we discovered a Celebrity “tent” with cups of water accompanying the goodbyes from the uniformed staff.  Our luggage was no where to be found.  The Celebrity staff member who was dressed in a uniform was apparently a police officer who led the way for us to follow him. 

Madly searching for our bags in the crowded terminal, we also had an eye out for Abraham and his sign with our name.  There he was.  No luggage.  A row of van drivers were desperately trying to move through traffic and get their loaded vehicles on their way. 

In what was a wild flurry of activity, as Abraham joined us in the search for our bags, there were two vans in front of ours, all blocking traffic.  Suddenly, we saw ORANGE!!!  Our bags were in a van we had not requested, not Abraham’s van!  The doors were being shut and it was ready to drive away.  We both yelled, “Stop!! Those are our bags!”  Stop that van!  The van stopped and minutes later, a load of about 25 bags in the rear of a huge van were being unloaded to get to our bags which of course were on the bottom of the pile.

The other awaiting van in front of the van with our bags took off with passengers and luggage, on their way to the airport. After unloading the “wrong van” we discovered were missing three large bags, two orange, one black and they were on their way to the airport.

It was sunny, humid and 90 degrees.  Pushy, pushy, pushy.  But, nice, nice, nice.  We managed to convinced the other van driver to contact the airport van to turn around in crazy traffic and road construction and come back with our three bags.  Yes, our bags ended up in two separate vans, neither of which we had requested or desired.

After what seemed like an eternity, we had all of our bags in Abraham’s van and we were on our way to FED EX, arriving a good 20 minutes after leaving the ship terminal through bumpy dusty unpaved roads in some of the poorest areas of Belize City.  Oh, oh, FED EX had moved.  They are now within a block of the ship terminal.  We’d have to turn around and go back. 

“Oh, no,” I persisted, “is there a UPS or any other shipping company near us now?” 

Abraham quickly answers, “Yes!  How about DHL?” 

“Yes!” I chimed in, “DHL it is!”  Minutes later we were standing at the DHL desk watching the rep look up rates in an old fashioned book as opposed to a computer.  Thirty minutes and $72 US later, we were out the door, insuring the package for $800.

And so began the almost four hour drive down the Hummingbird Highway.  We went through six, yes six, one car width bridges.  We encountered washed out roads, cracked broken pavement, scary single lane passing, slow semi trucks up the steep winding hills, slow drivers, crazy drivers, winding and mountainous roads.

We encountered cows in the road, cows in the pasture eating real grass, roaming free, chickens wandering in fields, pecking at natures little tidbits, soft billowy clouds over the sea, endless rows of banana trees and more orange groves than I’d ever seen growing up in California.  Endless coconut trees lined the hills and valleys, a lush forest of Mother Nature’s untarnished bounty of its fruits of the land.

Shortly before we arrived at the cottage, we asked Abraham to stop at a grocery store to get us through the first few days until we figure out transportation.  He gladly obliged while we dashed into the little store.  Shocked by the prices and knowing there was another bigger grocer a mile from the cottage, we opted to purchase bare necessities, food for breakfast and dinner.

Much to my delight, the steaks were local grass fed, from the farm where I had observed the cows grazing, the brown eggs were organic, free range and cage free at $2 a dozen.  The produce, although limited in its selection was fresh and had that “just picked from the field” look. 

When the cashier rung up our groceries, it totaled $114.  I was sadly disappointed this small amount had cost so much.  Tom nudged me when he saw the look on my face, ‘That’s Belizean dollars.  Its actually about half of that!”

At 5 pm, we arrived a the Little Cottage with the good directions provided by the owner. We were tired, hungry and anxious to see the beach house and get situated. 

We weren’t disappointed.   The house, situated on the owner’s property only requires walking the length of the small ocean front lot to the Caribbean Sea. 

Today, we’ll do laundry, in piles from the most recent eight day cruise which must be dried on a clothes line (no dryer), unpack only what we need, figure out transportation and spend as much time outside enjoying the ocean breezes, the breathtaking scenery and the unfamiliar sounds from birds of unknown origin.

We saved $800 today on an already booked cruise!!

Newspaper story about our adventure…

We’ve got press!  The story below was published in the Chanhassen Villager and other western suburbs publications. Some of the facts aren’t accurate, such as Tom ha two sons and my having a son and daughter, when in fact, it is the opposite. Guess that’s how media works. We won’t fuss about the details. 

The story hits the major points.  Our readership has catapulted in the past few days since the story was published on January 3, 2013, the day we sailed on the Celebrity Century out of San Diego.  Thanks to all of our current readers and our new readers for following us!  Thanks to our wonderful friend Chere Bork who was highly instrumental in getting the story in the right hands and son Greg for finding the article and posting it.

Former Chanhassen couple begins worldwide adventure

 Bon voyage. Today, Jan. 3, Tom and Jess Lyman, former Lake Minnewashta homeowners in Chanhassen, begin their worldwide wandering. They sail from San Diego today, go through the Panama Canal to Fort Lauderdale, then sail to Belize, then Africa, and Europe and beyond. They may be gone for five years or 10 years, depending on their health and other circumstances. They don’t plan to stop until they find the destination of their dreams or until one of them is tired of living out of a suitcase or just plain wants to stop.

The Lymans won’t be on the road constantly. Instead, they’ll use a series of cruises (already booked through 2015) to transport them to and from the Pacific Ocean to the Atlantic, to South America, to Europe, to Africa, and then to Hawaii. In between they’ve booked rental homes where they’ll stay no less than one month and no longer than five months at a time. Their rentals include a condo in Dubai, a home in Tuscany, a beachside cottage in Kenya, a home in the Kruger National Park Reserve in South Africa, and a 16th-century stone house in Cajarc, France. They’ll plan on meeting their families on the Big Island in Hawaii for Christmas 2014 where they have a rental and plan to stay through March 31, 2015.
Looking toward retirement.
Nearly a year ago, as Tom Lyman looked forward to his retirement from Burlington Northern, Minneapolis, at the end of October 2012, he and Jess, his wife of 21 years, discussed what they might do once Tom retired. Jess had retired in 2010 after a career in real estate and professional management.
Tom is 60, Jess is 65. Each had been married before and divorced. When they met more than 20 years ago, they recognized kindred spirits and eventually married, blending their families. Tom has two adult sons. Jess has an adult son and daughter. Between the two, they have six grandchildren.
Like scores of other baby boomers, the Lymans considered renting a condo, townhome, or small home in Florida or Arizona in winter, spending their days golfing, socializing with similar snowbirds, relaxing, and enjoying a slower pace.
After 43 years working 14-hour days and enduring a daily two-hour commute, being able to spend more time at home with Jess and his genealogy hobby would be welcomed.
But as they talked, they realized that doing the same old, same old didn’t have much appeal. As a couple they’d spent most of their free time at their Lake Minnewashta home, working on home improvements and entertaining their circle of friends.
“It was time to step outside the box,” Jess said. “Tom and I had both married young and had children in our 20s. We always had to be responsible and our lives revolved around our families.”
Life change
As they looked at approaching retirement, they realized it would be more enjoyable if they were healthy. Although Jess was always slim and fit, she had chronic pain and had high blood sugar. Tom was 40 pounds overweight.
About a year and a half ago, the couple changed their diets to low carb, gluten-free, sugar-free, wheat-free, and starch-free. Tom lost 40 pounds and Jess’s chronic pain went away.
“We’re in good health now,” Jess said. “That was our goal, to be in good health in our retirement. I could not have done this three years ago. The food thing is such a big thing. We don’t eat any grains, not oatmeal, quinoa, any beans, corn, or rice. It literally changed our lives.”
Can we afford it?
While their bodies became healthier, they had to do a similar checkup on their finances.
Jess and Tom ran the numbers. How much would it cost to do the typical retiree thing? They created spreadsheets of their cost of living if they did the typical retirement community life. They estimated their costs for housing, food, clothing, entertainment, and utilities, dental, medical and prescriptions, household goods, car upkeep and maintenance, and everything else they could think of.
And then they compiled spreadsheets of the costs of traveling. The cost of staying in rental homes, not only in the States but in Europe and Africa, food, transportation, special insurance, passports, visas, technology to keep them wired and in touch with family and friends.
“Our baseline was, ‘How much would it cost to rent a condo in a warm climate? How much would we spend a month in retirement?’ That was our magic number,” Jess explained in a phone interview two weeks before their January departure. “Could we make our travel number match that number and not tap into Tom’s pension? We didn’t want to do this and get into financial jeopardy.”
After a lot of research, number-crunching, and Internet research, the numbers worked.
But it would mean a drastic change to their lifestyle. Instead of settling into a warm climate condo to call home base, the Lymans decided they’d travel, trying out different locations and seeing the world until one of them didn’t want to travel anymore. No home, no car, few possessions except what they could pack in six pieces of luggage.

It’s the culmination of online research “eight hours a day, seven days a week,” Jess explained. Their website is organized into categories: Tom and Jess’s blog posts, itinerary, travel documents, medical issues, health insurance, travel costs, smart decisions, planning mistakes, Internet access, products they like, vacation houses, cruises, retirees, baby boomers, and senior concerns.
It’s so complete it prompted the question, “Are you going to write a book about how to plan for a trip around the world?”
“I’ve always wanted to write,” Jess said. “I always thought that when I retired that I would write. But I needed to find a vehicle to inspire me. So I decided to do a blog for our family and friends to avoid constantly emailing.”
In addition to the emotional preparations the couple is experiencing — saying goodbye to children and grandchildren, selling their home, having an estate sale and the reality of living out of six suitcases, Jess writes about all the small details necessary to make such a trip as worry-free and efficient as possible; details like getting wills and living wills written and into the hands of a trusted family member, doing taxes while out of the country, explaining why a second passport is necessary for the type of traveling they’re doing, questions to ask when buying a mobile phone for international use, arranging for a year’s worth of prescription meds, what to know about health insurance, getting Wi-Fi in remote parts of the world.
“When we planned our retirement and our plans to travel, we asked ourselves, ‘How well can we do this?’” Jess said. “It’s predicated by our health. If we get tired, we’ll stop.”

A holiday message…

Merry Christmas to those who celebrate with warm wishes to those who don’t and to those who may celebrate another holiday this time of year.

Comfortably ensconced in this Henderson, Nevada home, from which we’ll leave in 48 hours to head back to Scottsdale for our final four days of organizing and packing. 

The five-hour drive awaits us as a time to unwind after the busy but enjoyable eight days of precious time spent with family reminiscing about the past and dreaming about the future.  It’s all so clear to me now.  More than ever.

The preparations for Tom’s birthday party on the 23rd, again last night, Christmas Eve, and today, Christmas Day flowed with ease for me.  I over-bought food, more than we could possibly need, throwing my cooperative house guests into an eating frenzy when they say so much less would have been fine. I agree.

Never in my past have I ever over-bought food as I have done this time. Perhaps knowing this was my last cooking “hurrah” for what may prove to be years to come, my association of “food is love” was definitely overdone. 

I couldn’t get enough, the preparation or the love, the laughter, the memories, the photos or the stories, old and new, or the sound of Tom’s laughter in the background. 

Saying goodbye.  For us now, it was all about saying goodbye.  A repeat of the sorrowful goodbyes in Minnesota.  As I have written in the past, our choice to embark on an amazing journey doesn’t make us exempt from feeling sad about leaving everyone behind.  It’s now becoming more real as we’re only 9 days away from leaving the US.

Today, Christmas Day is yet another family-filled day, the third in a row with too much good food, an abundance of stories we’ve all heard before, laughter filling the air, and love all around. Sound familiar? Ah, the human spirit gathers to celebrate this joyous time of the year.

Jess’s Poppy Seed Strudel Recipe and Tom’s Homemade Irish Cream recipe…

We made 5 giant Poppy Seed Strudels today, rolling the dough with a tall bottle of flavored water.

With guests arriving soon for the holidays, it was time to put aside my culinary restrictions and start baking for those that do enjoy high carb, sugary, mouth-watering pastries and baked goods so appropriate this time of year.

One of our favorites is an eastern European recipe for Poppy Seed Strudel, Tom’s favorite, having missed it over the past year and a half on our restricted way of eating. 

I love this delectable pastry beyond words, a slice warmed in the microwave, covered with unsalted butter.  Unfortunately, I consumed very little in the past knowing it could cause a spike in blood sugar.  Now I will have none of it, not a taste.  My health is more important, especially now that we are only 13 days away from leaving the US.

So here is the recipe reminiscent of Tom’s childhood, found online some years ago (no creation of mine, other than pulling it all together).  It’s really not hard to make.  The prep time to make this entire recipe is less than two hours.

We have no rolling pin here.  Stubborn, I won’t buy one and will use a tall skinny bottle of chilled flavored water to roll the dough. It doesn’t have to be rolled very thin, so this will work. There was no small mixing bowl either here, either so I used a soup bowl to mix the yeast and warmed milk. Oh well.
(We also noted the lack of a potato peeler this morning.  My sister Julie is bringing one from LA!).

Polish
Poppy Seed Bread (Strudel) Recipe – Makowiec

An Eastern European dessert table would invariably include something sweet made with poppy seeds, either ground or whole. This poppy seed strudel is made with a yeast dough and is known as makowiec (mah-KOH-vyets) in Polish. Canned poppy seed paste is available in the ethnic or the baking aisle of most supermarkets. 

Makes 2 Sweet Polish Poppy Seed Breads
Prep Time: 1 hour
Cook Time: 1 hour
Total Time: 2 hours
Ingredients:
      1 package active dry yeast
      2 cups warm milk
     8 cups all-purpose flour
     3/4 cup sugar
     1 teaspoon salt
      5 eggs
     4 ounces (1 stick) butter, melted
     3 (11-ounce) cans poppy seed filling
Frosting
    4 cups powdered sugar
    1/4 cup 2% milk, starting with 1/4 cup milk until you have an easy to spread frosting
    1 tablespoon real vanilla

Preparation:

1.   In a small heatproof bowl, dissolve yeast in 1/2 cup of the warm milk.
2.  In the bowl of a stand mixer or a large bowl, combine flour, sugar, salt, and eggs. Add remaining 1 1/2 cups warm milk, butter, and yeast mixture. With the paddle attachment, or by hand, beat until smooth. The dough will be sticky at this point.
3.  Scrape dough into a clean, greased bowl. Sprinkle the top with a little flour and cover. Let stand in a warm place for 1 hour or until double in size.
4.  Punch down dough and turn out onto a floured surface. Divide the dough in half and shape each half into a rectangle.
5.  Spread 1 can or half of the filling you made on each rectangle of dough and roll up like a jelly roll. Turn the ends under so the filling will not leak out.
6. Place on a parchment-lined or greased pan, cover, and let rise again until double in size.

 7.  Heat oven to 350 degrees. Brush tops with additional melted butter. Bake 45 to 60        minutes or until strudels are golden brown.  Don’t let them get too brown.

8.  Remove from oven and cool. When totally cooled, neatly frost with the above frosting recipe, or use canned white frosting if preferred.

Over the years, Tom made dozens of bottles (over 150 wine sized bottles, one year) of this fabulous holiday treat. We’ve given them as gifts to family, friends, and co-workers nicely bottled, corked, and imprinted with a custom made Christmas labels.

Due to time constraints, we won’t be making it this year and wanted to share the recipe with our readers, many of whom have enjoyed this in the past. Here you go! Enjoy!

Tom Lyman’s Irish Cream (Equivalent to Bailey’s)

1 can sweetened condensed milk

1-pint ½ and ½ or real whipping cream

3 pasteurized eggs (important for safety)

1/8 teaspoon coconut extract

1 tablespoon chocolate syrup

1 cup Irish Whiskey or other bourbon or whiskey

Blend all ingredients in a blender for 2 minutes, then add 1 cup whiskey, measuring into the empty can of sweetened condensed milk in order to remove every last drop of the creamy sweetened condensed milk.

Ah, the holidays.  We love this time of year.  So much gratitude.  So much love. And of course, so much food!

Bye, bye, musical memories…

A few hours later the CDs were organized and ready to be sold at the upcoming estate sale. 

Having not moved in 26 years, it’s difficult for me to comprehend having everything in order in 20 days when the estate sale people arrive to start the process of sorting and pricing our belongings.  Ouch! Moving in the past seemed easier: pack, label and seal cardboard boxes, moving them to the next home, placing the boxes in the appropriate rooms to begin the process of unpacking. 

We’ve all experienced this at different times in our lives and although a stress laden experience, we all have managed our way through it to eventually unpack and put it away. The goal was to unpack neatly with the hope and expectation that the cupboards, drawers and closets would stay organized forever. Ha!

As I look around our house, decorative items still on the shelves, clothes still hanging in closets, pictures still on the walls, I see piles of boxes of photos and memorabilia ready to be mailed or dropped off to our grown children including boxes of special items to be distributed to the grandchildren as they mature; boxes of items to be sold at the sale and our never ending pile of luggage.  

Have I gone through every nook and cranny in this house, extricating the memorabilia or items that we may choose to take with us on our travels?  Our estate sale guy promises we’ll have one last time to peruse the items prior to the sale to ensure we haven’t missed a handmade treasure from our child’s or grandchild’s art class. That’s comforting.

In the past few days, I’ve removed every personal item from my car which is to be offered for sale next week on CarSoup where I had successfully and seamlessly sold my last car years ago, in a matter of a few days. 

In the process of cleaning my trunk, glove box and center console, I discovered no less than 15 music CDs most of which were installed in the multi-CD player.   Bringing them inside the house to sort and place them back into the cases, it dawned on me that I had yet to sort the 100+ music CDs we have accumulated in the house over the years.

As I handled each one, “memories flooded my mind” of disco dancing days, romantic dinners for two and quiet reflections to “new age” music so popular in the 80’s.  The thought of our magical Christmas’s, with music filling the air during our festive holiday celebrations, brought tears to my eyes. 

Ah, letting go of stuff, the process continues. One month and one day from today, it will all be gone.  What will remain? The memories. The memories. And the memories. 

Laundry around the world…

Peculiarly, caring for our clothing is somewhat of a hobby of mine. Perhaps, I was a laundress in another lifetime (not to say there is such a thing as another lifetime). Perhaps, I slept in a laundry basket as a baby.

It began when I was quite young, this fascination with laundry.  The middle of three sisters, I was assigned the task of washing, folding and ironing the family’s wardrobe when I was 10 years old. I didn’t mind at all. 

In grade school I attended a “girls only” home economics class (remember that, babyboomers?) where I learned to iron a man’s 100% cotton long sleeved dress shirt from the inside out in two minutes flat.  Failure to do a perfect job resulted in a brisk slap on the hands with a wooden ruler. (Can you imagine what would happen to that teacher in this day and age?)

Over many months, my hands were red and bruised every Thursday after the class.  I didn’t cry or complain to my parents. Determined to get it right, I practiced at home, night after night with a clunky old Sunbeam iron and a wobbly ironing board, often leaving rusty iron stains on my father’s old white dress shirt.

In time, I became the best “ironer” in the class. By the end of the school year I was presented with a pink and white certificate. Not only were my shirts the most neatly ironed in class, but I was able to accomplish the feat in 90 seconds flat.  I’d make a good housewife someday. This was 1958.  

Over the years, my ironing skills honed as irons improved and I could iron a dress shirt in 60 seconds, still doing so today.  

Folding is also quite enjoyable.  I love laundry. Putting away?  Not so much.

In this old house, the laundry is located in our creepy, cobwebbed basement, a full flight of stairs and long walk away. I don’t mind. The exercise is good, up and down, six times a day, to accomplish a mere two loads of wash.

Six flights a day, on average, over the past 26 years and I’ve run up or down, 56,940 flights of stairs!  I’d probably weight 100 more pounds had our laundry room been on the main floor.  I like laundry.

Of course, as time marches on toward the beginning of our year’s long world travels, I can’t help but think about laundry. 

Here are my concerns while living in vacation homes:

  1. Will the washers and dryers work efficiently in each of our rental homes?
  2. Will there be a nearby laundromat in the event one or both doesn’t work or in the case of the Stone House in Cajarc, France with no washer or dryer in the house at all?
  3. Will I be able to remove wrinkles with our new dual voltage steam iron?  
After considerable research, I have discovered that most cruise ships, on which we’ll spend almost one third of our time during the first five months, have no self service laundry facilities. This was both surprising and disappointing to me, far beyond my personal pleasure in doing our laundry, for the following reasons:
  1. Sending out a single tee shirt to be laundered by the ship’s staff may cost upwards of $4! Can you imagine the cost of an entire load of laundry? Including the tips payable for the staff person returning the items to the cabin and two loads of laundry may cost $100!
  2. Irons are not allowed on cruise ships and are confiscated upon entry, an obvious safety hazard (I get this). Thus, one must “send out a dress, shirt or suit coat” to be ironed, costing more than $15 each.  Ouch!  Hopefully, we can depend on that steamer.
  3. Piling up dirty underwear, socks, tee shirts and daily wear to repack in one’s suitcase is rather unappealing. Some of our cruises two weeks or longer. How many pairs of dirty underpants will we accumulate between the two of us and how much space will they take in our otherwise stuffed bags?  No, we won’t turn our underpants inside out and wear them again the next day!  No, thank you!  Dirty socks?  Yuck!!!
My little brain went to work on these realities. As for the vacation homes, we’ll just have to wing it, unaware of what we are up against until we arrive.  If the facilities are not manageable, we’ll plan a weekly outing, doubled up with other activities when we’re already renting a car and make the trip to the local laundromat a fun experience,  playing cards or reading aloud while we wait.  

I’d more than be willing to go to the laundromat without Tom, laundress that I am, but Tom insists that he’ll join me. In certain areas one won’t be safe alone at the laundromat. Daily laundry as I have known, most likely will be a thing of the past. Also, I surrender the fact that I will not be ironing unless an iron is provided.  

As for the cruises, my fingers went flying across the keyboard searching for a solution. In reading reviews at varying cruise websites, I noticed a common comment: many cruises purposely don’t have bathroom sinks with a closing drain.  Here is our solution to washing our own underwear, tee shirts, and small items, purchased from Amazon.com:

I purchased four of the above laundry packets which fit into the palm of my hand weighing only a few ounces.  These will provide us with 200 sinks-full of wash.  With the above clothes line that suctions inside the shower walls plus soap for my delicate items, we’ll save $100’s while cruising, leaving instead with a small load to deal with at our next vacation home.

Traveling the world for several years with no home, no place to return to repack, restock and replenish, all of these items will save us money, frustration and most of all, precious time doing that which we love, for me; a lot of love and laughter, a touch of adventure, and a little bit of laundry; for Tom, a lot of love and laughter, a touch of adventure and a smile while watching me do laundry. Ah, life is good.

We’ll have bug bites, we’ll be hot and sweaty, the bed will be lumpy, our feet will be tired, we’ll leave a shoe behind, a flight will be cancelled and a vacation home won’t be as described online.  But, in any case, our clothes will be clean.

Its all in the details…

As a person entrenched in the details, it’s not unusual to me that I have six tools one could use to crack crab legs: two types of crackers, two types of crab scissors, a pick and a small fork, service for eight. It’s not coincidental that I have service for eight.  Who would want to “shell out” (couldn’t resist) enough crab legs for more than eight people? 

This came to mind yesterday when I recklessly spent $48 for two bags of king crab legs plus $28 for the accompanying grass fed New York strip steaks.  

This is for three of us for Sunday night’s dinner; Tom and I and our friend Sue, who comes for dinner every Sunday night since the passing of her dear husband and our beloved friend Chip. She’s a trooper. Our hearts break for her. They were our role models as a happy, retired couple. Now, we are witnessing the depth of the loss of a beloved partner, excruciatingly sorrowful, a double whammy.

We laugh, we cry and we tell endless stories of our 26 years here on the point. (You can read about Chip in my post on June 1, 2012 found here in the archives).  We three deserve steak and crab.  

The combined cost of the meat at $76, plus the veggies and the salad, it may prove to be a $90 dinner at $30 each. We seldom eat in a restaurant.  However, each of the past two Saturday nights we did, first at Osaka in Coon Rapids with daughter and family and then at Biella In Excelsior with son and his wife.  

Dining in those restaurants, the average cost per person was in the $40 range. This justifies my $30 per person cost dining at home on this special night. After all, this is one of five remaining Sunday nights we have left before we leave for our world wide adventure.

Around the 15th of October, the processing of the estate sale begins leaving us no longer able to cook while everything in the cabinets and drawers; the dishes, the silverware, my gadgets and the pots and pans will be marked for sale. Ouch. My gadgets. Bye, bye, gadgets.

So today, while Tom is off to our oldest grandson’s football game, I’ll stay behind and begin the process of going through my many cookbooks.   

Most of my favorite recipes have been scanned, leaving hundreds we’ll never enjoy again due to our low carb, gluten free, grain free, starch free and sugar free diet.  

This diet gave us back our health, evident in the amazing blood test results we each received this past Thursday after Monday’s final doctor appointment.  Best results ever.  Everything perfect. The diet worked.  We’ll never fail to remember that we wouldn’t be able to travel the world for the next number of years if we hadn’t greatly improved our health by eating in this restricted manner. A small sacrifice in the realm of things.  

However, king crab and steak is no sacrifice, allowable for our way of eating. Besides, I can’t wait to set the table one last time with those six crab utensils before some crazy detail orientated fool such as I, buys all eight sets for a ridiculously low price. 

Hum, could I fit two sets of crab tools inside a shoe in one of the six orange suitcases?  Or perhaps, four sets in case we have company.

Aboard ship for 59 days in the first 5 months…

On January 3, 2013 we’ll leave the US to embark on our first cruise. Over the next five months we’ll experience a total of seven cruises totaling 59 days at sea. Later, we’ll post more details about these upcoming cruises and house rentals.

We’ll spend November and December, 2012 living in a lovely first floor condo overlooking the pool in Scottsdale Arizona, a commitment we’d made long before we decided to travel the world. That commitment created extra expense and inconvenience but we chose to honor our agreement.
We’ve decided to utilize these two months in Scottsdale to purchase and set up our new laptops (awaiting Windows 8 release soon), our new unlocked smart phones (being released into the market in November) and other technological devices that we’ll describe later upon purchase.

To take advantage of these two months we’ll prepare as much as we can of our 2012 taxes, forwarding everything to our accountant in Minnesota. We’ll get new passport photos taken (outdated after six months), apply for our second passports and visas, download 100 or more movies onto our portable external hard drive and get Tom’s new eyeglasses at Costco (great deal).

With the condo only 25 minutes from the Mayo Clinic in Scottsdale, we’ve decided to follow our doctor’s orders and arrange appointment for Tom in gastroenterology for one last check (as recommended every few years) when one has IBS and Celiac Disease. Although he is symptom free due to our diet these two tests can confirm provide us with peace of mind; a colonoscopy and an endoscopy.

Tom’s sisters spend the winters in Arizona, about an hour’s drive and we’ll visit them. In the first half of November we’ll drive to Nevada to establish residency, apply for NV driver’s licenses and visit family, later to spend eight days at Christmas in a house we’ve rented in Henderson to be close to family and friends for one last time.

We’ll celebrate Thanksgiving in Arizona. In Nevada, on December 20th we’ll have our teeth cleaned. We’ll observe the Mayan Calendar’s End of Time on December 21st (hopefully, not really the end!), Tom’s 60th birthday on December 23rd, and of course, Christmas, away from “home,” the first time as true vagabonds.

A year ago, we would have laughed aloud at the thought of leaving behind everyone we love and everything we own, except for a gaggle of suitcases and hearts full of memories. 

Here we are, packed to the gills, totes filled with memorabilia currently scattered about the house for our kids to store for us. Our paperwork and photos are scanned, our documents and spreadsheets bursting with pertinent data stored in Dropbox for safekeeping, accessible from anywhere in the world.

Yesterday I spent an entire hour scanning a lengthy booklet from our well known national bank on wire transfer procedures, accounts which we’ve set up in both of our names. I inquired as to whether this booklet was online to be downloaded. “No, not yet,” they say. “Gee…kind of behind the times,” I thought.

It’s this little tasks that fill up substantial portions of my everyday. As I sit here in my comfy chair, writing this today, I tapped my Android smart phone (on its last days) to take yet another peek at the handy app on my home screen, Retirement Countdown Free and today, it reads: “1 Month 18 Days.”

One month and eighteen days from today we close the door to our home one last time. We leave behind our loved ones, the lives that we’ve known, our three little dogs buried in the yard, the friends on the peninsula, the eagle swooping in the trees in the summer, the coyotes hovering hungrily in the winter and the gentle fluttering call of the loons.

On a lighter note, we joyfully leave behind six foot snow drifts often trapping us for days and, mountains of goose poop. Yes, mountains of goose poop!

Abundant trade offs…

As a logical, numbers crunching individual, I learned a long time ago, “there is no such thing as a free lunch.”  

The literal translation of this phrase may be construed as:

When enjoying lunch with a friend, who enthusiastically states, “I’m buying,” most often a thought ran through my mind of “Wow, free lunch! One less meal I have to buy.”  Nope, it’s not free.

The trade off?  Next time, I’ll buy lunch or, next time when the friend calls at 10 PM for emotional support, I’ll listen. Or next time the friend needs a ride when their car breaks down, I’m all over it. No, there’s no free lunch.

Remove any resentment or sense of obligation from the mix and we have a cooperative sharing relationship, friendship, a human condition entrenched in trade-offs.  No doubt, we relish in the opportunity to be a part of this magical experience, not only in friendship but in all relationships.

Within our hearts, the “unconditional love” we profess, for our children and grandchildren, we seek pleasure, pride, laughter and return of love. No, we don’t abandon them when unfulfilled, but we grievously hunger for reciprocation continually trying to inch closer.

No free lunch, this life.  No free lunch, traveling the world. Sacrifices? Yes, many.  Beside the obvious of leaving those we love, leaving the familiarity of the home we have treasured for 26 years and leaving the security blanket of predictable, but not mundane life as we’ve known it, we leave behind our most valued “creature comforts.”
What are they?  Will we find alternatives to replace them or will our interest in them entirely dissipate over time?  They include:

Our bed: A California King Sleep Number with split top mattresses with dual controls, with the ability to raise and lower the head and the foot for maximum comfort.  After many years of suffering with advanced degenerative disk disease, this bed has been a life saver not only for me but also for Tom.

My pillow:  A Tempur-Pedic neck pillow that has been highly instrumental in improving my sleep. Unable to imagine life without this pillow, Tom and I used a SpaceBag and our cute little vacuum with the hope and expectation that we could shrink the pillow sufficiently enough to pack it to travel around the world with us. It’s much smaller after sucking out the air, although heavy as a rock. Maybe, maybe not.

Our two comfy chairs:  Whether a sofa, a love seat or a chair, we all have a favorite place to park our butts at the end of a task filled day.  With our two comfy Flexsteel chairs, positioned perfectly in front of the big screen TV, we have spent endless hours together entertaining ourselves by laughing, talking, watching our favorite shows (many ridiculous) and lounging.  We never sleep in these chairs.  We each have the habit of awakening one another if we spot the other’s eyes begin to close.  Why we do this?  I don’t know.
Our TVs:  Whether cooking or eating in the kitchen, the TV is on in the background, although we’re seldom fully engaged in a show. In the evenings after dinner, we head to the family room to the above mentioned chairs, laptops whirring on our laps as we begin our nightly ritual of talking, laughing, commenting, sharing a funny email and simply having a great time.

Our dessert:  Ah, a year ago, when we both decided to go gluten-free, grain-free, starch-free, sugar-free and low carb, I quit baking the elaborate desserts we used to enjoy each night after dinner. Tom got fatter and I exercised harder. Here are a few of our former desserts, now replaced with healthier low carb, gluten free, sugar free items:
Elaborate dessert: Homemade Ice Cream Cake, perfect for a hot summer night. Bye, bye, cake!
Elaborate dessert: Homemade Puff Pastry Napolean!  No more!
Elaborate dessert: Homemade Butterscotch Meringue Pie (I used 12 eggs whites)!  Never again!
New dessert:  Unsweetened Greek Yogurt topped with GF, SF, low carb chocolate sauce, unsweetened organic shredded coconut and bits of low carb chocolate coconut protein bar. Not bad at all! (Tom won’t try this).
Our ice machine: Eight years ago when we renovated our kitchen we added a SubZero ice machine.  It was easy to adopt the habit of first loading our  insulated, handled mugs with ice to the brim and then pouring in our favorite iced tea, Crystal Light (using two packets to 1/2 gallon of purified water, as opposed to one packet). Our four little ice cube trays, now filled with jewelry, yet to be packed, will make enough ice to last most of a day.

Creature comforts will now be replaced with creatures, big and small. Comfortable beds, comfy furniture and my pillow traded for lumpy discomfort? Maybe. TV replaced with reading downloaded books, playing games, sitting outside at night staring at the stars, listening to the sound of the ocean, the roar of a lion, the laughter in the streets.  Desserts may impossible to make with limited availability of ingredients and icy drinks may be a thing of the past. 

Trade-offs? Yes, many. As Tom always says after we’ve rearranged the furniture, “Give me some time.  I’ll get used to it.”
