Cranking out the plans…Acquiring visas for the not-so-savvy-Internet users…

Everything about our lives requires planning. Oh, I’m not complaining. It just “goes with the territory.” At times, we chuckle over the irony. One cannot settle back and let the days roll out, one after another, routines firmly in place, comforting and easy.

This morning, Tom held up the contents of the remaining ground coffee he’d put into a Ziplock bag and said, “This looks like enough coffee left including the one unopened bag to last us, doesn’t it?” 

Looking at the bag, I shook my head, “No, Honey, we’ll need to buy one more bag of coffee.”

They don’t sell ground coffee anywhere in Pacific Harbour. Tomorrow, we’re heading back to Suva where the airport is located, for sightseeing and shopping, a 70-minute taxi ride each way, FJD $100, USD $46.83 (cost for the round trip).  It would be worth buying one more package. If we ran out it wouldn’t be worth the time and taxi fare to drive back to Suva only for coffee.

Yesterday, I completed our menu and accompanying grocery list for the 19 remaining days in Pacific Harbour, a combination of cooking and dining out. We scheduled dining out on six occasions, one including Tom’s birthday on December 23rd at the #1 rated (Trip Advisor) restaurant in Pacific Harbour, Seduce at the Pearl, a luxury resort.  

On Christmas Day we’ll return to the Pearl for the Christmas lunch buffet at the Riviera Restaurant. Yesterday, I booked the reservation, paying the required 50% deposit over the phone. We haven’t decided on New Year’s Eve with no specific festivities as yet posted. 

Leaving us with approximately 13 nights to cook, six of which we’ll have roasted chickens for which I’ll prepare a variety of side dishes, our grocery list really boils down to the equivalent of two week’s grocery shopping. Each week, we’ll head to Arts Village to pick up the chickens as we’re doing today with a stop at the nearby vegetable stand to fill in what we’ll need.

With every day’s meals and dining out plans on my online calendar, it’s easy to ensure we’ll have enough on hand, leaving little unused food behind. In Fiji, steaks and roasts are tough. Mince beef and pork, chicken and canned Pacific wild-caught salmon (for me) and tuna (for Tom) from which we make two separate salads with celery, onions, hard-boiled eggs, and homemade dressing. These are the only main dish options that work for both of us. The mince works well with other ingredients for a dozen or so recipes we alternate depending on available ingredients.

We don’t purchase locally caught fish when we’ve heard and read online that much of the fish caught is done so in the toxic reefs close to the shore. Considerable sewage disposal goes into the ocean here.  No, thank you for the fish. (Most restaurants purchase seafood from suppliers which are often imported).

With the limited cooking options for our way of eating and the availability of great restaurants in this area, we’re happy to dine out a few times each week. 

On Saturday night, I felt like a kid in a candy store when we dined out, not due to the fact that I didn’t have to cook, but more so due to being out among people, the fanfare, the special meals prepared for me, and the pleasant surroundings. 

Other than Tom’s upcoming birthday dinner at the fancy restaurant which will be more expensive, I doubt we’ll spend more than FJD $100, USD $46.83 on any single occasion dining out even with a beer for Tom and Fiji water for me. With taxi fare relatively low cost, it’s a no brainer for us.

With the grocery list on a handy app on my phone for tomorrow big shopping trip and today’s return trip to Art Village to wander about and to pick up the two roasted chickens, (we called yesterday and placed the order) we’re feeling comfortable that the food situation for our remaining days is in place. 

Of course, if opportunities arise that we decide to dine out on additional occasions, we can forgo one of the chickens on any given day.  We always like to keep our options open with a goal of flexibility.

Another area of planning during this remaining period centers around clothing for the upcoming cruise.  Mine are all washed, hung to dry, and wrinkle-free on hangers in the closet. Thursday, I’ll begin washing all of Tom’s clothing and bleaching all of his “tidy whities” which become greyish when the washing is done by household help.

I’m now the household laundress don’t mix whites and darks if I can help it. At the moment, I’m otherwise totally caught up on laundry with virtually no ironing on the horizon. I haven’t ironed in over three years.

Its common to see “parasitic plants” where coconuts are attached to an earthy structure eventually grow a coconut palm.

Besides food and laundry, we’re in the process of reviewing the required visas we may need over the next year making notes on the calendar as to dates we need to apply online using the cruise line’s recommend CIBT service

It costs a little more to use this and other such services than applying on our own but we’d be highly concerned about shipping our passports while living in a foreign country as opposed to doing it easily online, scanning, and sending documents by email.

Sadly, many senior travelers, unfamiliar with using the Internet burden themselves with copying and mailing all their documents including their passports to various consulates in order to acquire visas when any of it may be lost in the mail or stuck sitting on someone’s desk. 

If any of our readers find they need help using such a service, asking anyone of the younger generation could easily solve the problem when they’ve grown up with iPads, smartphones, and computers on their laps. In today’s world, it’s astounding what even a six-year-old can accomplish online.

In an hour, our driver will collect us for the drive to the Art Village. It’s a 45-minute walk each way which we could manage but who wants to carry two greasy chickens and a few other items in the heat and humidity attracting flies and mosquitoes? At a taxi fare of no more than FJD $10, USD $4.68 for the round trip, it’s worth it.

Living this life requires planning.  Moving every one to three months is a daunting task. Moving on and off every two or fewer weeks on cruises is also challenging. 

Although we don’t have to move furniture and household goods it does require forethought and careful planning. It’s necessary to condense every material item we own to fit into three suitcases, one duffel bag, one computer bag, and one yellow Costco bag. 

As we peruse everything sitting out at this point, we’re always in awe of how it manages to fit in those few bags. My cruise clothing consisted of one medium load washed in cold water with one hand washed item. Tom’s won’t be much more. For us, our limited supply of “stuff” elicits a sense of satisfaction over what we’ve been willing to let go of. How we’ve changed that way!

Part 2…It was a Bollywood night at the Uprising!…Health concerns while cruising…

Our new friends and neighbors, the honeymoon couple from Minnesota and Wisconsin, stopped by to take us up on our offer of borrowing one of our two wifi dongles. We’d offered several days ago when they weren’t able to get online at their vacation rental house after trying for several days. 

With over 16 gigs left on Tom’s device, it was unlikely we’d use the balance before leaving Fiji.  With our upcoming cruise in three weeks and five other cruises circumventing Australia, it would have been nice to be able to use the balance of the data on the devices when the ship docks in Fiji on a few occasions. Unfortunately, the data on the SIM cards expires 60 days from topping it off.

With wifi expensive and metered on most cruise ships (a few ships are offering an unlimited package), it would have saved us metered data time while in Fiji ports. Long ago, we decided to stay on the ship when in ports we’ve visited in the past, unless there’s a particular venue we missed on a prior visit. 

Yesterday, we checked in for the upcoming cruise on January 5th. Always a time-consuming process, requiring that both passports and a credit card be available during the online check-in, we worked our way through “pages” of inquiries. With no printer (our portable printer died) we’re unable to print the copies they request for check-in at the pier.

Over these past years of travel, we’ve learned that paper copies of transport documents simply aren’t necessary other than for passports and visas. For the greatest ease, we take a photo of our “tickets” on my phone, bringing up the photo as needed when we check-in. 

There’s never been a single occasion where this has been a problem. The days of finding a printer at the hotel or an “office supply” store in a small remote village are long in the past. 

This method also applies to flights, trains, tour venues, and cruises. We even used the photo of our tickets when boarding the Eurostar (the Chunnel) when we traveled from Paris to London in August 2014.

It’s hard to imagine we’ll be aboard a cruise in three weeks. It will have been seven months since our last cruise ended in Sydney when we immediately flew to Cairns, picked up a rental car, and drove to Trinity Beach where we lived for three months. 

Our biggest concern when cruising has been avoiding the “cruise cough” which can spoil a number of days of cruising. Of the 11 cruises on which we’ve sailed to date, we’ve ended up with the cough three or four times.  Preferring not to whine here, we haven’t made a big deal. But this time, we’re determined to avoid any illness. 

Regardless of a passenger’s immune system, it’s easy to fall prey to one of the many cruise-related illnesses including the dreaded Norovirus which fortunately we’ve never contracted. Fanatics about washing our hands, not shaking hands, and steering clear of others who appear sick, we still have become ill.

There was a post blocking part of our view but I didn’t want to obstruct anyone else’s view by standing.

Implementing a few new protective actions, we’ve emphatically decided on the following:

1.  Twice-daily mouth rinsing with pure organic unrefined coconut oil for at least 10 minutes on each occasion.
2.  Twice-daily mouth rinsing for 5 minutes with hydrogen peroxide (kills bacteria and happens to whiten teeth).
3.  Under no circumstances touch another guest; not a hand, not a shoulder, not a hug. When hearing a sensitive type of story from a guest, it’s easy for women to reach over and touch her hand in a supportive manner, especially me. Many people aren’t offended by the kind and caring touch of another. Men are less inclined to do this.  I know these simple acts have been instrumental in our previous illnesses when in most cases I’ve become ill first, then Tom.
4.  Washing hands immediately before and after eating and using offered sanitizer at every possible opportunity.
5.  Using a linen napkin wrapped around our hands when serving ourselves in buffet restaurants, immediately tossing the napkin after serving, taking a new napkin to use with the meal.
6.  Carrying hand sanitizers. We have several packets of these we carry with us throughout the ship that cleans both surfaces and hands. I have no concern over the dry skin using these frequently can cause. A swipe of coconut oil on my hands totally reduces any dryness. As a matter of fact, I’ve been using coconut oil as a face and body lotion both mornings and nights and am thrilled with the results.

Hopefully, these amped-up proactive measures will serve us well.

Yesterday, we decided on a long walk to the neighboring market we’d yet to visit located in a gas station on the Hibiscus Highway. At our relatively leisurely pace on the rock-covered roads, we estimated we’d be gone for over an hour. With an overcast sky, the walking was easier than on a sunny day.

Over the past three days, it’s been cloudy for most of the day, making walking a little easier. The mozzies aren’t as bad here during the day as they were in Savusavu.

Many of the guests joined in the dancing. Neither of us likes to participate “on stage” during performances of any type. It’s never us on the stage!

When we dined outdoors on Saturday night at the Uprising Beach Resort, only a few swipes of repellent kept me free from bites. The only bites I’ve received have been while hanging the laundry outside especially on these cloudy days. Learning my lesson, I now use repellent on laundry days.

As for the walk, we checked out the merchandise in two tiny markets finding little we use when all the meats were of unknown origin and frozen and with no produce other than potatoes and onions.

Leaving the area of the markets we spotted a vegetable stand across the highway. Could we possibly find lettuce, a product difficult to find in Fiji? Alas, we were in luck. We purchased six small bunches of lettuce, a few carrots, and a bunch of green onions for a total of FJD $10, USD $4.69.

Tom only had FJD $20 bills in his wallet. The kindly vendor had no change suggesting we take the produce and return when we have a $10 bill. When we head out tomorrow for the roasted chickens at the Arts Village, we’ll get change and stop to pay her on the return drive.

The ants are under control. There are no cockroaches running across the polished wood floors. We have plenty to keep us busy at home today and we’re as content as we can be.

Good thing we verified our information…

There are numerous creeks and rivers on the island.

There’s no doubt we’d have looked at our flight reservations at some point before departing Savusavu in 27 days. Usually, our flight information is online, making it easy to check details as time nears.

While living in Trinity Beach, Australia, with several flights necessary between leaving there and arriving in Sydney on January 4, 2016, we’d used a travel agent for the first time in our travels with paper copies as opposed to our easy- to-review online bookings in our account at Expedia. 

We found the agency at the local mall in Trinity Beach many months ago and thought how easy it would be to have someone else book the five flights we needed starting with the departure from Trinity Beach, Australia on September 7, 2015. Overall, it was easier. Booking multiple flights with an erratic Internet connection is frustrating and time-consuming.

When we weren’t responsible for booking the flights we didn’t have the ingrained knowledge of the details we’d have had if we’d booked the five flights on our own.

Arriving to Nadi Airport on September 8th, after an overnight stay in a hotel in Sydney, once we arrived in Savusavu we gave little thought to future flights until it was nearing time to book an airport transfer in Nadi (so we thought) to our next vacation home in Pacific Harbour on December 6th.

We originally arrived in Nadi, Viti Levi, the largest of the Fijian islands and then took the small prop plane to Savusavu, the smallest airport we’ve experienced to date. 

In our minds, we’d fly out through the same airport and perhaps a similar flight and the plane we’d used for our arrival. Few flights arrive and depart this small island each day, most flying in and out of Labasa, a village larger than Savusavu, a two hour drive from here. 

There are only two flights out of Savusavu on Sundays, one in the morning and the other in the afternoon. We see and hear those prop planes twice a day, assuming those are the only two flights when in fact, on certain days of the week there are a few more flights. 

These cloths are hung at a cemetery, a tradition in some Fijian cultures.  Having asked several locals as to their purpose without a specific answer, we’re still uncertain if there is a distinct purpose other than decoration on burial grounds.

Yesterday, we decided it was time to remind ourselves of the upcoming flight particulars to Viti Levu, especially when we were attempting to book airport transfers to and from Nadi to Pacific Harbour which required the inclusion of dates, times and flight numbers.

When reviewing the several page flight itinerary, we’d kept tucked away in the leather computer bag, we were shocked to see we weren’t flying to Nadi as a layover, when we originally arrived.

Instead, in checking our paperwork, we discovered we’re flying to Nausori Airport in Suva (Savusavu and Suva can be confusing. These are two distinct villages at each of the two main islands in Fiji).

There’s no way we would have missed this when it’s necessary to check our flights in more detail before booking an airport transfer to drive the 2.5 hours from Nadi to Pacific Harbour.

When the documents clearly stated we’d arrive in Nausori Airport instead of Nadi, reducing the drive time by over an hour, we were thrilled. At that point, we began the process of finding a company that could handle our round trip airport transfer both into and out of Nausori. 

Junior stopped by offering us these two papayas.  Unfortunately, we had to decline when papayas although possessing many nutrients are loaded with sugar and carbs as are most other tropical fruits, restricted in my way of eating.  Tom doesn’t care for fruit.

After finding a few options, I proceeded to make online inquiries. In both cases, the website inquiry pages didn’t work. This wasn’t a good sign deterring us from phoning or researching their options further. In this day and age, if a “company” doesn’t have a working website, we’d question the condition and quality of their vehicles.

Our options were becoming more clear. Either grab a taxi at the airport or rent a car at the last minute. We decided to try one more thing…contact Susan, the property owner and see if she knows someone who’ll collect us at the airport.

Most of her vacation home renters/tourists fly into Nadi which would have made booking a professional transfer a breeze. To fly into Nausori, a much smaller airport in Suva is not as easy. Susan was more than happy to assist and is checking for us today. We’ll see how that rolls out.

The cost of renting a car in Suva is outrageous. With taxes and fees for the 29 days, we’d pay around FJD $4209, US $2000, more than we’re willing to pay for a rental car. Generally, in most locations, we pay less than half that amount. A taxi might have been our only option.

We realize that our desire to live in many remote areas puts us in this position. Yet, we’d trade this minor challenge for gridlock traffic, lengthy queues wherever we go, increased crime rates, and higher prices on vacation homes one finds in large cities.

Badal visits us almost every day checking out what may be on the menu. We never fail to give him a plate of something delicious. After he does, he sits on the veranda looking at me with his legs crossed, hoping for second helpings. He looks fit and healthy compared to many dogs we’ve seen in the village.

As we’re writing here today, we received an email from a transfer company Susan found for us. The rates are as follows:

Since receiving this above information moment ago, we’ve already confirmed we’d like to book this reservation, including all of our flight information and will pay in advance today for the round trip as required. At FJD $462, USD $214.42 for the round trip, this is fine. Renting a car in Suva averages at FJD $148.69, USD $69, per day.  In only three days we’ll recover this entire cost, as opposed to renting a vehicle.

A great solution, a helpful property owner and an apparently well respected company will handle our transfer needs. Its these aspects of our travels, that inspire us to push ourselves (and others at times) for resolutions.  Many come quickly and easily and others may be more time-consuming and tricky to accomplish.

Today, another dark, dreary day and rainy day, we’re staying in. As I write, Tom is watching the Minnesota Vikings football game on his laptop using his headset. He’ll be busy for the next few hours while I make every effort to avoid disturbing him with comments or questions. 

Sometimes, that’s challenging in itself.

Negative comments from a reader…Torn about responding…

It’s a rarity that a reader sends us a negative comment. When it does occur, perhaps once a year, I struggle over whether or not to post the comment or to ignore it.

Long ago, we wrote that the intention of our site is about joy and fulfilling dreams, not an arena for negative comments and bantering back and forth in disagreement over topics or comments we’ve made. That doesn’t mean we shy from a discussion. But, in doing so, kindness is always of the utmost importance.

We don’t express political or religious views or present any negative comments regarding any person’s beliefs or preferences. From time to time, I may discuss frustration over the food industry’s money orientated goals of presenting chemical-ridden foods at us in the US markets. If this offends anyone, that’s never been our intent.

Over these past 41 months, since we began posting, we often mention the recovery of health I’ve experienced from changing my diet, a choice I’ve made for life. Tom joined me in this path except when on cruise ships and dining in restaurants.

Through sharing recipes and resources through books and medical research documents, we’ve had an enormous response from readers all over the world who have chosen their own path through their own research. 

In dozens of cases, readers have written to us via private email requesting the book list we compiled that helped me discover my own path which if they choose, may prove to be beneficial for them. 

We never claim to be medical professionals or experts in any of these fields. We always encourage readers to seek professional assistance in choosing their path to improved health. 

We’re simply laypeople, literally hungry to learn ways in which we can extend the quality of life in our senior years, which ultimately adds to the joy of continuing our world travels, hopefully for years to come.

Yesterday, when I received this comment, I struggled over whether or not to upload it to the site. The reader wrote:

“Your husband is right. You obsess over food. It’s annoying and will probably mean I quit reading altogether. I read only about the first couple of paragraphs of this page, scrolling down, and when I came to the recipe, scrolling faster.”

Here is the link to the post on which the above comment was made. (Oftentimes, readers are “catching up” reading posts from months or years ago). This post was uploaded in March 2014 but the comment arrived yesterday. If you’ll click the link to this post and scroll to the bottom of the page, you’ll see comments made by other readers at that time. 

I didn’t post the above reader’s comment online in the “comments” section at the end of the post. I didn’t since it included her name and to avoid publicly using a person’s name to address an issue, I am posting it here without the name.

Now, for my response to the reader which I assure you is done so, not with the intent of criticizing the reader but to address what may in fact be an issue for some of our other readers…our ongoing discussions of food:

Undoubtedly, I make frequent references to food including the shopping, quality of products, my perceived healthfulness of products, our way of eating, recipes, and often photos of meals we’ve had in restaurants or cooked “at home.”

As all of our readers are aware, changing my diet changed my health to such a degree it allowed us to travel the world. Had this not happened, we’d never have been able to travel. I won’t go into all of that again. Most of you know the story.

But, traveling the world is often a story about food and culture. In reading many travel sites, we often find ourselves admiring food photos and stories since for many travelers, it’s all about the food, the great restaurants, the fabulous finds of the “tucked away” spot that filled their bellies and hearts with love and joy, often a treasured story they’ll tell for years to come.

For us and the limitations of my way of eating, we tend to stay away from restaurants in some countries which are more inclined to use flour, sugar, and starch in the preparation of food. 

This reality definitely hinders our experience to a degree. In a way, it’s a limitation, not unlike those that many people experience at some point in their lives. And, we chose to adapt to the best of our ability…finding homemade food, grocery shopping, and recipes bringing us that same kind of pleasure.

Yes, I’m obsessed with food. Always have been. Always was a great cook and loved to entertain. It’s a hobby. It’s a passion. Food is love. And now, for us, food is medicine. And yes, Tom occasionally reminds me about my passion, obsession, and hobby as he gobbles us the next plate of fabulous food, thanking me for a good meal.

Another important point for us, perhaps beyond our personal enjoyment of food is the hundreds that have written to us over these 41 months that have asked for booklists, information on medical research, and recipes that they may decide to peruse in their own search for renewed health. 

If in this process, only one person through gaining inspiration in reading our posts has found a solution through a diet that has improved their health, every single one of the 1112 days that we’ve sat here writing and researching will have been worth it. 

As for the recipes, there are literally hundreds of people that have written to us requesting recipes for a meal we’ve mentioned or a food photo we’ve posted. Instead of spending the recipe via email, knowing there are others less inclined to write, we post the recipe online.

If this above-mentioned one reader decides to stop reading our posts that’s a personal choice and we’re saddened by that decision. It’s easy to scroll past those points that one may find less interesting or desirable to their owns tastes and interests. 

Our goal is not singularly about food. If you’ve had an opportunity to read the posts of the last several days regarding safety it’s evident that is the case. We strive to provide a wide array of topics that may appeal to all ages, those who sit at their kitchen table each morning, a cup of coffee or tea in hand, that travel along with us. 

We feel your presence and appreciate every single one of you.

Shopping and trying on clothes…Haven’t done that in awhile…Remembering a funny shoe story…Four days and counting…

The boutique, Azure, had a wide array of quality women’s and men’s clothing.

Feeling better yesterday, the last day taking the antibiotic Cipro which had finally had done its job, I was anxious to go shopping for a few things to wear on dress-up nights on the upcoming cruises. 

The boutique clothing store Azure, had caught my eye on a few walks through the Princeville Mall over these past four months. Of course, it caters to its local demographics, the senior population, with lots of flowing, Hawaiian themed flowered print tops, a style that has never appealed to my tastes. Fortunately, they had numerous other options more appealing to me.

With the long sleeve white dress shirt we’d ordered for Tom which is still in the plastic package avoiding becoming wrinkled until we board the ship and hang it up and, his black pants, that’s about as dressy as its going to be for him.

In an attempt to avoid over dressing as his “date” I decided that a few casual dressy shirts and tops, my style, not too flowing and not too flowery, would be an excellent find. 

Connie knew the store’s merchandise well, making this rare shopping experience as easy as possible.

In the past few days, I’d already tossed a number of clothing items to lighten the load to make way for new items. I tossed a pair of jeans shorts that were always too small, seemingly marked the wrong size when I received others at the same time, in the same style and size that did fit me. Out of the country at the time, it made no sense to return the one mis-marked pair of shorts. Instead, I’ve carried them around for two years! 

Also, yesterday I decided to toss my water shoes. With a design flaw, they hurt my feet, causing blisters, and would likely do the same to others if I donated them. I’d worn them once in Belize when we were on a tour through the rain forest when I looked down to see a black thing on the shoe, thinking it was a giant black bug.   I screamed hysterically. Everyone in the tour group laughed, especially Tom, when I realized it was an item on the shoe as shown in the photo below. 

That event transpired before we spent almost nine months in Africa. I don’t scream over bugs or, possible bugs anymore.  I flick them away or get Tom to scoop them up with the broom and dustpan. 

Now, I’m down to five pairs of shoes; one pair of Africa boots, one pair of workout shoes, one pair of white leather Keds and two pairs of sandals, one black, one tan.

Walking on a tour through the rain forest in Belize in February 2013, I looked down to see this black thing on my shoe, thinking it was a big black bug. I screamed. I no longer scream when I see bugs after spending almost nine months in Africa. I got over it. We still laugh over this shoe thing.

Also, I tossed two worn tee shirts, one worn pair of workout pants, and a pair of black Capris I’ve carried around since day one in our travels. I need to complain about those black Capris. They were of good quality that fit well in the legs and hips, to a point. 

Then, that low slung hip hugger thing kicked in that made them sit in a place on my hips where they’d fall down every time I moved. What’s the deal with that? I know I’ve written on this topic in the past, but it continues to baffle me when this style simply doesn’t seem to change as the years go by.

Whoever thought that mature women (over 30) would be interested in wearing hip huggers, no matter their shape and size must have been nuts. We have a waist, a natural indentation in most of our shapes, that’s a logical spot for the “waistband” of pants to sit. I get the disgust over “mom jeans” which I don’t wear. But, I do see a certain appeal for a slightly below the waist cut on jeans and pants. With a little stretch in the fabric and a good fit, a pleasing look may be accomplished for most women.

Due to my picky attitude over this reality and my tall stature with a 35-inch inseam, buying pants is nearly impossible for me. The only jeans I’ve found that fit me are from Old Navy when ordering an extra long in my size. A year ago, I ordered three pairs of jeans that we had shipped to Madeira along with other items. These should last me for years to come.

The boutique is arranged to take advantage of every bit of space, leaving many options for shoppers.

As a result, I have a few bottoms other than jeans and shorts, especially nothing dressy other than two skirts, one cream, and one black. Oh, what I’d give right now for an extra tall pair of white jeans. I have no choice but to wear my workout ankle length leggings that actually look OK when the top is appropriately dressed up, worn as an alternative to the skirts.

Last week, when Tom drove to Lihue to get another rental car, he was unable to list me as a driver of the car when I wasn’t in attendance to sign the documents. Subsequently, I am unable to drive the rental car these few remaining days.

Having Tom wait in the car while I try on clothes didn’t bother me or make me feel rushed. He never complains while I  grocery shop and this occasion would be no different.  He sits in the car, windows open reading his book, totally entertained for as long as necessary.

He dropped me off at the front of the store.  Hesitantly, I entered, not optimistic I’d find much of anything.  Meeting Connie, the helpful salesperson at Azure made the painful experience easier. Not painful in an illness kind of way. Painful in, who likes to try on clothes in a tiny, hot, non-air-conditioned dressing room in Hawaii or anywhere for that matter? Not I.

I’ve never been attracted to silky, flowing tops.  As for dresses, they take up too much space and weight in my single clothing bag.

Perhaps this is the reason why I haven’t shopped in a store in so many years, other than the few items I purchased in Boston last September when dear cousin Phyllis took me to a mall to Victoria’s Secret to purchase three bras (which by the way, are holding up very well. I think I can make it with these for another few years). 

After getting a pull-on shirt stuck over my head and shoulders almost having to ask for help, I decided to call it a day. I’d made a pile of six items, spending $290, surprised over the good prices. 

Connie did an amazing job of helping me pick out what I liked. Oh, what did I like? I had no idea when I hadn’t shopped in so long. We figured it out and I’m thrilled with my purchases, none of which remind me of the loose flowery tops with shoulder pads that my mother wore in the ’80s.

Finally, I was back in the car with Tom. As soon as I sat in my seat, Tom cranked up the AC when he saw sweat dripping off my brow. I guzzled my awaiting mug of iced tea. Maybe I wasn’t totally recovered enough to partake in such a vigorous clothes-trying-on session. I hadn’t exerted myself beyond folding laundry and cooking easy dinners in almost two weeks.

Luckily, after Connie helped me scour through the racks of merchandise, I was able to find six items to purchase.

I’d thought of taking all the items I purchased out of the bag and laying them on the bed to take photos to post here. But, Connie folded each item so neatly that they’ll be easy to pack. Instead, we plan to take more photos of us on the cruise as has been requested by some of our readers. 

As for packing, the third bag and duffel bag are done. Yesterday, we washed our jeans and shorts and bleached all of our white clothing which we do when moving to a new location. We packed the duffel bag with all of the jeans which we always carry on the flights. It weighs about 40 pounds which prevents us from paying extra weight fees we’d incur if these jeans were packed in our respective single bags.

Our total checked luggage: two large bags, one medium bag. As for carry-on: the duffel bag with the jeans, one computer bag with both laptops, the pill bag, and my purse all of which fits on our one remaining wheeling cart.  That’s all we own, folks, all of our worldly goods. That’s still hard for us to believe.

Over the next three days, we’ll begin to post favorite photos we’ve taken in Kauai with a few from Maui, Big Island, and Oahu as we leave the state of Hawaii at long last. On Saturday, when we leave Kauai, we’ll post our final expenses for the four-plus months we’ve lived in Kauai.

On Sunday, we’ll post our one-night experience in Honolulu staying overnight in a hotel and heading back to a restaurant we loved. On Monday after boarding the ship on Sunday afternoon, we’ll post photos of our cabin, the ship and our boarding experience and then…the fun will begin.

What’s the deal about applying for visas for various countries?…

Long ago, we applied for second passports, which basically consists of a US two year second passport with different passport numbers from our main passports. Most US travelers aren’t aware that a US citizen can apply for a second passport.

Why did we need a second passport? Two years ago, it was necessary to send in one’s passport to a consulate in order to get visas from some countries. We didn’t want to be stranded in a country without a passport in our possession while a visa was being processed through snail mail.

Over these past few years, most countries have since begun issuing electronically produced visas for travelers to their country, making it unnecessary for us to send it in to acquire a new visa.

Over these past two years we’ve used these second passports for all of our entries and exits to about 40 countries, resulting in our main passports, which don’t expire until 2021, having no stamps posted as yet.

In December, the second passports expired. As a result of the use of electronic filing for visas, we decided not to renew it. When we soon leave the US, for the first time we’ll use our 10 year passports.

How have we been able to get visas in all of our travels to date? We’ve been able to acquire 90-day visas when we arrive at immigration at any airport, train station or port. The ease of this was surprising to us. 

This easy process doesn’t apply to every country’s immigration process. For some odd reason, US passport holders seem to be presented with an easier process to enter and exit most countries.

If you have a passport from any other country, please check with your travel agent, passport office, immigration or consulate for the country you’d like to enter to determine the process applicable to your country’s passport in regard to obtaining visas. This can vary from country to country.

The Kauai Path is an easy to walk path along Donkey Beach and other beaches.

Thus far, for us, its been a breeze. When traveling to multiple countries via a cruise ship, the immigration staff aboard the ship collects all of our passports. When we arrive at a particular port of call, an immigration officer boards the ship and processes all of the passenger’s and ship staff’s passports for entry and exit.  

Prior to reaching a country’s port, our passports are returned to us, in most cases which we bring with us on our tour whether arranged by the ship or a self guided tour.

When arriving in a country, we wait in what is usually a long line at immigration processing, tell the agent how long we’d like to stay and as long as the stay doesn’t exceed their set duration of 60 or 90 days, we receive a dated stamp providing us with a visa which is stamped in our passports.

Australia, where we’ll be arriving in little over a month on June 11th after an 18 day cruise from Honolulu, Oahu to Sydney, Australia requires a pre-arranged visa before entering. If we arrived at our ship without processing the visas the cruise line wouldn’t allow us to board. 

The wind and waves were substantial on Monday which has since settled down. 

In reality, a more stringent process may be wise for most countries to follow for obvious reasons I won’t get into here. Here’s a quote from Tom:

“When we applied for our driver’s license in Nevada before we left the US, they asked me to take off my glasses when they took the photo.  I said that I needed to wear my glasses to drive. They said it’s not for that reason. This is a facial recognition photo. Why isn’t this technology used for passports?”

Good point! Why isn’t it?

Last night, we visited CIBT at this link. In less than 10 minutes, with our passports and a credit card on hand, I completed the online documents separately for each of us and our individual visas for Australia were processed, completed and confirmed at a cost of US $45 each.

(By the way, once we arrive in Australia, we’ll be entering all dollar amounts posted here in both USD and AUD (Australian dollars) as we ‘ve done in all other countries which use a alternate form of currency).

The visa process will be slightly more complicated for some of our upcoming stays including both Fiji and Bali.  We’ll report back the processes for those.

Our Australian visas were issued last night for which we won’t need a piece of paper. It’s recorded electronically in the Australian immigration department’s system and will appear when we check in at immigration at Sydney.  The visas are good for one year until June 10, 2016. 

With our visa on file in Australia we’re allowed 90 day visits only and in one year we’d have to file again which may be more complicated the second go-around. Before we book more time in Australia, we’ll figure it out. At this time, we are only booked for 89 days in Australia (leaving one extra day for cancelled flights, etc.).

We decided that we’ll investigate other options in Australia once we are there and get a feel for the “lay of the land.” Prices on vacation homes are as much as 100% higher than other countries in which we’ve lived, making it difficult to rent vacation homes to fit within our budget. 

We still have the over two month gap to fill beginning next June and have yet to decide where we’d prefer to go. We shall see what we decide and of course, report it here promptly. We’re attempting to stay somewhere in the South Pacific, if possible.

At certain areas, the beaches are less pristine as is the case here in the southern end of the Kauai Path.

With the imminent visa task handled for the moment, we’re now beginning to tackle the other items on our lengthy “to-do” list, found here.

We’re down to 17 days until departing Kauai to fly to Honolulu for one night. On the 18th day, we’ll board the ship. We’re excited, to say the least. We haven’t been on a cruise since this past September. Hopefully, we’ll have good weather as we travel so far across the ocean. If not, as always, we’ll just hang on!

Strawberries were small in Marrakech as shown here. They don’t do GMOs (or pesticides). As a result, the berries are small and unevenly shaped. When buying giant, uniform strawberries or other fruit, its easy to assume that nature alone doesn’t make them that huge, uniform and sweet. Remember the strawberries we ate as kids? Cruise cancellation and results of vacation rentals date changes…New amazing photos…

As a result of next year’s cruise being cancelled and the necessity of booking a different cruise with two day’s difference in arrival and departure dates we waited anxiously to hear back from the owners.

When he realized I was no threat she relaxed a little.

Would they have availability for us to stay four days longer in New Zealand and arrive two days later to Bali, extending an extra two days at the end to compensate?

With the substantial time differences between New Zealand and Bali, 22 hours and 18 hours respectively, we didn’t expect to hear back for a few days. First, we heard back from the owners of the New Zealand property with a positive response…no problem with staying four days longer than our contract. For Bali, arriving two days later and staying two days longer is also a yes from the owner, neither of which scenarios resulted in any additional costs.

As he moved, we were able to see more of the white and black feathers which will soon replace all of the fluff.

We’re grateful for the availability and the kindness of the owners of both properties for their cooperation.  Problem solved. We had a backup plan ready to implement in the event either of these didn’t work out which included additional costs and monies lost. We’ve found that there’s always a solution. The question becomes, does one want to pay for that solution which is often the case?

Yesterday afternoon, a sunny day, we drove over to the neighborhood to check out the growth of the Laysan Albatross chicks. Being able to watch them morph from fat fluffy balls of inactivity and to actually see their new mature feathers was a sight we’d never expected to see in person.

As we slowly drove through the neighborhood, we spotted one chick after another in varying stages of molting their fluff. It’s crazy how they aren’t disturbed as we stop the car and I get out to take photos. We may be only 15 or 20 feet from them but they are as fearless of humans as the adults. 

They’ve been so loved and respected by the locals, they’ve had no reason to be afraid. Yesterday we watched a homeowner working in his yard with a chick and two parents only three feet away. Neither the human nor the birds paid any attention to one another as they each went about their usual activities.

One of the main highlights of our long stay in Kauai has been watching the life cycle of the albatross from the parents sitting on the nest when we arrived on January 15th, to the chicks hatching in early February and now the chicks maturing with only a month or more from the time they’ll fledge from the nest. 

Suddenly, she stood up giving me a great shot of the white feathers growing on her underbelly.

Although we won’t be here to witness them fledge which only occurs over a very short period as they run to the edge of the cliff and dive off to soar into the air, we’ll keep an eye out on the live video feed we’ve been watching many times each day at this link.  By watching this live feed with two chicks about 100 feet apart it’s possible to see the permanent feathers coming in and the fluff molting away.

This was our intent when we stopped by yesterday. We’d hoped to take photos of the gradual change in their appearance and were pleased to be able to do so with ease.

When the chicks sit on their back end, their weight causes their huge feet to lift off the ground.

Before we leave Princeville in 20 days, we hope to be able to follow Cathy, the Laysan Albatross expert, and docent, on one more of her two daily rounds as she documents the progress of the chicks, twice each day. She does this for seven days a week over seven months each year when the albatross return to the same neighborhood for the life cycle to begin again, year after year.

After returning home I prepared our pu pu for last night’s Full Moon Party. After attending four of these enjoyable monthly parties (last night was our final party), orchestrated by friend Richard, we’ve found these parties to be highly instrumental in enhancing our social lives. 

We couldn’t stop laughing when we shot these huge paddle-like webbed feet lifting off the ground as she leaned back on her butt.

Holding the party at the Makai Golf Club’s pool was especially fun last night. Although the crowd was slightly smaller than usual with about 20 in attendance, we had a marvelous time, again meeting new people.

Back at home by 8:30, we had a late dinner when I’d left a full meal ready for our return. Popping our precooked (earlier in the day) tasty well-seasoned chicken wings into the microwave (sans sauce), adding a salad and green beans we sat down at the little table to dine and watch prerecorded videos of “Shark Tank” and the new “Beyond the Tank.” Once again we had an excellent day and evening.

Months ago, the chicks slept most of the day. Now, they are alert and awake waiting for the parents to return with more food. They don’t interact with the other chicks although other parents may stop by for a visit.

Today, we’ll take a walk in the neighborhood, watch some golf, prepare Sunday dinner and play with Birdie and his friends, who as usual stopped by this morning as soon as we opened the blinds and the door.

Full Moon Party tonight!…Decided on a pu pu…Recipe sharing…Today’s post is for “foodies” only…

Whenever we bring a dish to share, we consider the tastes of the other guests rather than impose a recipe that is only befitting our dietary concerns. Many recipes for delicious and outrageously contrary-to-our-way-of-eating are my appetizer recipes from years ago, still taking up space in my brain.

Recently, when we invited a couple (who were on vacation) to our home for happy hour, I made an old favorite from the days when Tom and I first met and we entertained quite a bit. It’s high carb, high fat, high starch, and high sugar, which I never eat but, Tom does on occasion.

Please share this recipe below with your friends who have no illness, no high blood sugar or diabetes, no heart disease, no clogged arteries, no dementia, no risk of Alzheimer’s disease, no pain, no signs of inflammation anywhere in their body, and, aren’t overweight and can eat anything they want without gaining weight. For those lucky folks, here’s the recipe we’re bringing tonight, which is NOT SUITABLE for my way of eating:

Jess’s Apricot Almond Brie en Croute 
1 medium-sized round Brie cheese

¾ cup apricot jam (not jelly)
½ cup slivered almonds
1 package refrigerated Pillsbury Crescent Rolls
2 T melted butter 

Preheat oven to 350.  Cover a baking pan with nonstick tin foil or parchment paper. Top the unwrapped Brie cheese with apricot jam. Sprinkle half of the almonds atop the jam.  Pinch all the seams together of the entire package of crescent rolls and carefully wrap the dough all the way around with the Brie keeping the jam side up. Make it look as nice as possible, leaving no gaps or holes. This takes one minute. Brush melted butter over the top. Poke holes in various spots in the top to allow it to expand during baking.  While butter is still moist, add the remaining almonds to the top.  Use a spatula to transfer it to the prepared baking pan. 

Place in the preheated oven for 40 minutes or less, checking to ensure the top doesn’t get too brown during the last 10 minutes (based on how hot your oven cooks).  This dish is very hot. Be careful handling it. Serve with a variety of crackers and plates, forks, and knives. May be prepared 48 hours in advance and cooked at the time of serving. Reheats well in the microwave.

When our guests visited, they loved this recipe so much they asked for it which prompted me to finally write it down for them via a PDF document. I hadn’t made this dish in years.

I suppose I have hundreds of recipes stuck in my brain, not unlike the useless documents and files we end up transferring from an old computer to a new computer over and over again as we make new computer purchases. How I wish that one day I’d feel rambunctious enough to remove that clutter.

And, how I wish I could remove the clutter of old recipes from my brain in the same rambunctious manner.  Yesterday, I found myself looking for a recipe for Moo Shu Pork, a favorite I often made when preparing a meal of Chinese food. (Is it PC to still call it “Chinese food?” I could call it Asian food but there are many regions of Asia that cook many different styles of food. Hopefully, I don’t offend anyone).

Why was I looking for this recipe, so far removed from my modern-day reality? I’d found a recipe on Dr. William Davis (Wheat Belly) site for low carb, grain-free, gluten-free, sugar-free tortillas, which could substitute for the Mandarin pancakes required in the recipe for Moo Shu Pork. I thought if I could find my recipe for the food that goes inside the Mandarin pancakes (like a tortilla), I could adapt it to my way of eating.

Oh, dear, I’d better post Dr. Davis’s tortilla recipe or I’ll get 100 email messages asking for it (of which I always, happily and quickly respond to each):

Dr. William Davis (Wheat Belly) Tortilla Recipe 
Make 4 tortillas      
1 cup golden flaxseed, ground
4 tablespoons almond meal or 4 tablespoons almond flour
1⁄4 teaspoon fine sea salt
2 eggs

Preheat oven to 375°F. Prepare a large baking sheet by lining with parchment paper. Add ground flax seeds, almond meal/flour, and salt to a medium bowl and whisk together. Whisk in the eggs just until combined. Divide the dough into 4 equal balls.  Using 2 pieces of parchment paper, roll each ball between pieces until 6” round. Place on the prepared baking sheet. Bake for 5 minutes, or until golden.

After I spent considerable time looking for a recipe similar to my old version of Moo Shu Pork, casually mentioning it to Tom he said, “I never really liked that dish anyway. Don’t bother to make it for me.”

Oh. it was one of those dishes I made in our “younger days” when he was courting me while pretending to like my “non-meat and potatoes” recipes. Now that we’re old, he doesn’t try so hard to impress me. My feelings aren’t hurt. I’ll make the tortillas and use them for my adapted recipe for Mexican food (Is that OK to say?)

Anyway, here’s the third recipe of the day for which we received zillions of requests after mentioning it in a post a few days ago; low carb grain-free, sugar-free, starch-free high fat protein bars. 

I found this recipe online and adapted it to my taste and way of eating and voila, its a heavenly dessert, energy booster, and plain and simple meal substitute loaded with nutrients that won’t raise a person’s blood sugar if eaten in moderation, the size of an average protein bar.

From all the research I’ve done thus far as a layperson, on what foods raise blood sugar and subsequently increase inflammation I began testing my own blood sugar. In doing so it proved to me that eating any foods in excessive amounts, even low carb foods, can raise one’s blood sugar, even if I ate too large of a portion of protein, for example, a huge steak.  Moderation is always the key in life, isn’t it? 

Watching animals in the wild was a good lesson for me about eating in moderation, eating only until one is satisfied and not uncomfortably full. Animals never overeat (other than our household pets if we’ve  been feeding them “people food”).

Wild animals only eat until full and comfortable. We never saw a lion while on safari eating the last morsel off the carcass he’d killed. He/she was always leaving some to savor at a later time, with the female leaving some for her cubs or often letting the cubs eat before her. Not so much with the males who would often steal the food from the females, never sharing with the female or her cubs.

If you make these delicious bars, please place individual portions into baggies to store in the freezer, taking out one bag at a time to eat frozen. They are so good they could trigger a frenzy of overeating.

Here’s the recipe:

Jess’s Low Carb High Fat Keto Bars
1 cup organic extra virgin coconut oil, melted (Don’t use
microwave.  Use room temperature)

1 cup organic almond butter
½ cup any lowest-carb protein powder (I used hemp)
1 cup shredded coconut, unsweetened (the large unsweetened coconut chips  found in the healthy section in grocery stores or a health food shop, are good to use)

½ cup chopped almonds, macadamia nuts, walnuts, pecans or
hazelnuts (I used macadamia nuts, grown here in the Hawaiian Islands)

½ cup sunflower seeds
½ cup unsweetened cocoa chips (found in health food stores)
1/3 cup erythritol or other preferred 0 carb sweetener,  (found in health food stores)
2 tsp cinnamon
¼ tsp Himalayan or sea salt
Whisk together oil, nut butter, protein powder until smooth.  Add remaining ingredients and stir. Pour onto lined parchment paper baking pan being careful to have pan fully covered with parchment.  Cover and place in freezer until frozen (3 hours).  Break or cut into bar size pieces, keeping single servings in plastic bags in the freezer.  Keep and eat frozen.

These low carb recipes that I post are suitable for a low-carb way of eating where the body is burning its own fat stores for fuel, not burning the sugar we’ve consumed. These recipes are not intended to be eaten in combination with sugary, high calorie, high-fat food for which in doing so may increase in weight could result.  Burning our own fat for fuel is referred to as “ketosis”, not ketoacidosis, a dangerous life-threatening condition.  These are two entirely different metabolic states. The reading material in the following paragraph explains this further.

A boat, filled to the max, looks for the last vestiges of the humpback whales, many of which have already begun the journey to Alaska for the summer.

The colors in the displays in the souks were astounding. Four of our senses were all in full on mode as we wandered through the maze-like environment; the smells, the sights, the sounds, and the touch of the fabrics. Lump sums due this week…The Kauai Path…more tomorrow…A year ago, a cart and a cart pusher in Marrakech…

Although we haven’t had a sunny day in almost a week, we’d saved these photos to share as a reminder that soon the sun will shine again.

We knew the month of March would require a few good-sized lump sum payments for vacation rentals and cruises. These big payments are a part of our life and try as we may, we still cringe a little when they come due.

Then again, we don’t have utility bills, cable bills, yard service, and household repairs and maintenance. Instead, we prepay rent for two to three months, in full, well in advance of occupying the premises.

When most travelers pay for a vacation rental or hotel, most likely they are paying for one or two weeks. For us, the month’s long rentals often require amounts due close to $10,000. For cruises, there’s often a balance owing after a deposit of $5000 or $6000.

This week, we’ll pay the second payment for the Trinity Beach, Australia house of $3115, paying the balance one month before our move-in date of June 11, 2015. The cruise we’re taking from Honolulu to Sydney on May 24th has a balance owing this week of $5110.

Therefore, this week we’ll shell out $8225. The upside of this is that our rent will be paid up through September 8, 2015. In May, we’ll pay for the next rental in Fiji and so on. Although we’re always paid well in advance we continue to have future rental balances payable in advance. 

Keeping careful documentation is a vital portion of our travels. At any given time, we can reference our Excel workbook for up-to-the-minute records of all of our current and future expenses, travel dates, reservations, itinerary, and so on, copies of which we store in two separate clouds, an external hard drive, and two laptops.  That’s backup for you!

We’ve yet had to leave a beach unable to find a parking spot, even on the most perfect days.

Of course, I cringe a little when these sums are due and sigh with relief when the payments are processed, putting it all behind me. How do we pay for these? The balance of the rental is usually paid via PayPal which charges fees for processing. 

In some cases, the owner will pay the PayPal fees and in other cases, after we’ve negotiated a good rental rate, we may agree to pay the fees. If an owner is providing us with a good discount for our extended stay, you bet we’ll agree to pay the fees.

The shore wasn’t sandy at varying points on the Kauai path yet a few sunbathers’s found a more private spot.

As for the cruises, as we continue to work with Vacationstogo.com for the best fares, they automatically charge our credit card on file on the date the balance of the full fare is due usually 75 to 90 days before sailing depending on the cruise line. Once paid, we receive a paid in full receipt by email. 

The cruise lines have varying schedules as to when and how much one may recovery if they cancel after the payment is made. The policies are clearly defined in the cruise documents with a rare exception for an alternate option in case of emergency.

It’s always sad to read about passengers with a need to cancel a cruise when illness strikes and their frustration when they can’t get a refund. Sadly, it’s the nature of the beast. 

Speaking of cruising, last night we watched the new TV show, “Escape.” This first two-hour episode in the series was the sinking of the Costa Concordia in January 2012. We both watched in silence, our mouths agape over the horrifying events of this tragic situation and loss of life.

When the show was over, Tom asked me if it had an effect on me regarding our five upcoming booked cruises. The biggest effect on us both was from the loss of lives and their family member’s grief and sorrow and, the trauma suffered by the survivors. We’d originally heard about this a year before we took our first cruise.

Of course, we’ll think about it next time we go on a muster drill and pay even more attention than in the past and again from time to time when we hear unusual noises aboard a ship. Human error. Its rampant and at times the cause of tragic events.

As much as we’d all like to have a guaranty of safety in our lives and a guaranty of good health, these simply aren’t available. But, we can choose not to worry over those situations over which we have no control and which, most likely, will never occur.

As for any angst over lump-sum payments, once they are done, I always let it go. We’ve budgeted for these expenses, we’ve made them affordable and they are a part of the amazing life we’ve chosen to live.

Happy Monday to those who still work. Find peace in knowing that someday, you’ll have the time to live your dreams, whether it’s reading a good book on the veranda, planting flowers in the garden, or stretching yourself to do that which you never imagined you’d do.

As for retirees…why do you care that it’s Monday? We don’t.

Once our driver delivered us from the airport in Marrakech to the Medina we were met by Adile, one of the four staff members of our “riad” located in the heart of the souks and, the cart handler who wheeled our luggage to the property. It was quite a walk through the Medina and the souk. We were exhausted from the long flight and layovers but, the excitement energized us as we took in the unbelievable sights before our eyes. When a cruise line has special pricing, Tom starts chomping at the bit. He can’t help it. He loves cruising. That’s not to say I don’t love it. But, he loves it more. 

Not only does he love the cruise itself but he absolutely is fascinated with the planning and booking process. He researches cruisecritic.com for comments from recent cruise passengers on past cruises as to the best cabins for the particular ship, the appropriate side of the ship, port (left) or starboard (right) for the best views during the cruise based on the locations, and the best promotions and packages to choose.

As he’s gathering all the information, he writes down all the particulars, (in this case he wrote on a brown grocery bag when we couldn’t find a pad of paper), performing financial analysis as to the best options, average daily rates, and benefits to taking the cruise.

Oh, good grief.  I stay out of the cruise planning.  He need only tell me where, when, and how much and I’m happy. Once we’ve booked a cruise, he reads me the data from the “cruise confirmation” documents that arrive in my email upon booking and paying a deposit, enabling me to enter the pertinent data into various sheets in our Excel workbook: Itinerary, Deposits Paid, Cruises Booked.

A nice feature of booking cruises is the fact that one can cancel with a 100% return of the deposit up to 90 days before sailing. If not canceled, at that 90-day point, the balance is automatically charged to the credit card on file. Partial deposits may be refunded as a sail date approaches based on the number of days of the cruise and the dates the cancellation is requested.

To date, we’ve canceled only one cruise which was well before the 90 day period, receiving a 100% deposit.  After sailing on the Norwegian Epic, we decided to cancel a future cruise, we’d booked on the Epic a second time. We hadn’t liked the ship, although it survived the 50-foot swells at sea for three days. 

The Epic was poorly designed to our liking, too large and difficult to maneuver from area to area.  In addition, the design of walking through the bathroom to get into the cabin was particularly unappealing, leaving no privacy when showering and dressing. Gee, a girl (or guy) has to have a few private moments now and then!

Yesterday, after Tom spent time-off and on over the past several months, researching possible future cruises and after spending considerable time since the family departed, he was ready to book two cruises. 

Usually, when booking cruises we’ve had to pay a $450 deposit per person, resulting in tying up $900 of our money for as long as two years into the future. 

When we’d booked several cruises, we disliked the idea of a cruise line having that much of our money for such an extended period. It made no sense at all. But, waiting to book a cruise could result in a lack of availability of preferred sailing dates and cabin selection.

While on our last cruise from Vancouver to Honolulu on the Celebrity Solstice, we prepaid two cruise deposits in advance for $200 each, a promo-only offered onboard the ship. It wasn’t necessary to choose which cruises we wanted at that point. The deposits would remain in place indefinitely until we chose cruises.

Yesterday, our prepaid $200 deposits came into play when we booked the two cruises, three and a half months apart, on the Celebrity Solstice, the same ship that brought us to Hawaii in October 2014.

Today, we’ll share the details of the first of these two cruises and tomorrow, the second, leaving us with a total of five cruises booked in the future, all of which we’ll list collectively in tomorrow’s post.

Here are the details of this cruise we booked yesterday, oddly sailing on the day of our four year anniversary of leaving on our journey to travel the world. We booked an upgraded cabin resulting in a total cost for a balcony cabin on the starboard side for an unobstructed view (of lifeboats) for a total of $4143.81 including tax and gratuities for both of us. On some of our cruises, we return to the cities and countries we’ve already visited.  We never mind this fact.  For this cruise, we’ll have already been to Sydney, Cairns, and Bali. However, we don’t mind the redundancy at all. Seeing an area from a cruise ship is an interesting part of the experience that we never fail to enjoy.

Actually, many ports of call in our upcoming cruises may be repeats at some point. But, the fact that we have an opportunity to see new locations as well only adds to the experience. For both of us, being on the ship itself is delightful giving us an opportunity to interact with other travelers, making new friends along the way.

Booking these two cruises leaves a few holes in our itinerary. During the upcoming four months in Kauai, we’ll be busy filling those gaps and considering the last booking we have scheduled to date, the end of the second cruise, March 13, 2017. Our goal is to always be booked for the upcoming two years. 

As a result, we’ll soon begin booking beyond March 13, 2017. How exciting, that will be!

It’s hard to believe it was a year ago that Tom spotted the Mozambique Spitting Cobra next to his bare foot as we sat on the veranda in Marloth Park.  He jumped away while I ran for the camera.  This jittery photo was a result of my hands shaking a bit as I shot this through the clothes line rack when the snake tried to get into the house.  Tom moved it with the mop as shown in the right side of the photo.  For more details on this story, please click here.
