Hot today! Ouch! Recipe for gluten free fried walleye!

Yesterday morning around 9 am our power went out.  Of course, it was one of the year’s hottest days, hovering in the 90’s.  Mostly, we stayed indoors moving our big fan from room to room in a futile attempt to stay cool.  We didn’t complain.  No AC.  Humid.  Sticky.


Our house, uncharacteristically untidy with bits of fresh cut grass everywhere after a house full of adult kids and grandchildren last week and all day Saturday, well into the evening. 

My plan for Sunday was to vacuum, sweep and clean in the comfort of air conditioning.  I work quickly.  I could be done in two hours including a few loads of my favorite task, laundry.  

Cleaning up after an early breakfast of sausage, eggs and delicious gluten free coconut flour pancakes, I started the dishwasher, the washer and the dryer. While watching the taped version of Sunday Morning, (check out the link if you missed it), we settled into our comfy chairs while we contemplated what items to post for sale on eBay.  Poof!  The power went out.

Jess’s Gluten Free Coconut Flour Pancakes
(Better than regular pancakes. Low carb. Doesn’t spike insulin). Use sugar free syrup and real butter if following a low carb diet. 35 carb grams for entire recipe that serves 4-6)
8 eggs
½ cup coconut oil or melted butter
½ cup unsweetened coconut milk (may need more for consistency)
4 tsp. sweetener or four packets of sugar free
½ teaspoon salt
½ cup coconut flour (No need to sift. Stir well)
1 tsp baking powder (I use GF, aluminum free)

Blend together eggs, oil, coconut milk, sugar, and salt. Combine coconut flour and baking powder and thoroughly mix into batter. Heat 1 tablespoon of coconut oil in a skillet. Spoon batter onto hot skillet making pancakes about 2.5 to 3 inches in diameter. Batter will be thick but will flatten out when cooking. Makes about 8 pancakes.

We each held our breath while we waited for it to come back on, looking back and forth at one another, afraid to speak. After a long silence, we popped out of our comfy chairs running around the house to notice the state of our affairs.

The washer, dryer and dishwasher stopped mid-cycle.  (BTW, an ant just ran up my leg.  I am hot and sticky a half hour after a cool shower and now ants are crawling on me as they would on a dropped cherry Popsicle in the dewy grass on a steamy day)! Do we open the windows or try to retain the cool air? We kept them closed.

Within an hour, a long enough wait, Tom left to load up four of the five gallon gas cans to fill the wired-to-the-house generator we had purchased years ago. Minutes later he returned to fire it up, much to our mutual relief.  The house powered up, the dishwasher resumed its cycle while the washer and dryer awaited my commands but…not AC.  

NO AC!  We were having company for dinner at 5 PM.  Gluten free almond flour battered fresh caught walleye cooked in coconut oil on the hot stove (BTW, the stove started working again yesterday morning!  Go figure). The hot stove and no AC!  Twenty-four dollars worth of fresh walleye in the refrigerator and no AC!  

Determined to continue as planned, we went about our day.  Tom read the newspaper, moved his multiple lake-water pumped sprinklers around the yard every few hours, paying special attention to my flowers that were not looking well on this hot day.

I scurried around the house doing my tasks, occasionally stopping to stand in front of the oversized oscillating fan which we hauled from room to room as we worked.

Strangely, I didn’t think much about leaving in three months. I didn’t attend to the little piles of papers, bins of clothes and stacks of myriad accouterments that I usually mull over on the weekends. My only thoughts were the two new items I posted on eBaya variable speed band saw and a pontoon boat cover; and the preparation of the walleye for the company for dinner in the hot kitchen.

The GF fried walleye, the salad with homemade ranch dressing, the fresh green beans, the raw sugar snap peas with dip and the sauteed GF bread cheese was the perfect dinner, enjoyed by all while the fan whirred back and forth between us.

Jess’s Gluten Free Fried Walleye

2 lbs prepared firm fish filets (walleye, tilapia, cod)

2 cups almond flour, breaking up lumps by hand in large bowl

3e eggs beaten½

cup unsweetened coconut milk, mixed with beaten eggs½

tsp salt½

tsp pepper½

tsp garlic powder½

tsp onion powder

1 cup coconut oil
1 cup olive oil
Begin to heat both types of oil in large non-stick pan
on medium high heat.  Beat eggs, salt and coconut milk in large bowl suitable for dipping filets. Mix remaining  seasoning with almond flour. Set bowl of eggs and milk next to the bowl of almond flour with seasonings.
Dip filets, one at a time in flour mixture, then eggs mixture, then back into flour mixture, patting gently with fingers to ensure fish is covered in flour. 
Place the filets in preheated oil and fry for about 3 minutes, making sure bottom isn’t sticking lifting with a metal spatula.  Do not overload the pan with filets.  Cook in a few batches.
Turn carefully when brown on one side using spatula, not tongs (tongs will tear off coating).  Cook another 3 minutes or longer to brown and cook fully.
Place cooked filets on parchment paper to drain.  Continue process until all filets are cooked.  Since batter flakes into oil while cooking, which slows the cooking process, occasionally spoon off bits and pieces with a slotted spoon or small strainer, keeping  oil as clean as possible.
Serve with favorite sugar free low carb tartar sauce or other sugar free low carb dipping sauce.

Bed was another story. A hot, fitful night of tossing covers, turning over and over, awakening us both many times throughout the night. 

This morning the repair person from our gas company’s appliance warranty plan is coming to fix the stove. Ha! The stove now works but I didn’t cancel yesterday after the stove started working when the power went out and the AC quit.

Our AC is under warranty. Sure, the stove repair person may not know how to fix the air conditioner. We could get lucky. However, with a captive audience, I will try to convince him to get someone here that can fix it TODAY!!!

I can’t tell if this is resourceful or conniving. Whichever it is, it’s going to be over 100 today. Too hot to handle!

Aaahhhh!!! The stove repair guy just called to let me know he’s on his way. I tentatively asked him if he also works on AC. He said, “YES!” Yeah!

One hour later:  It’s back on!  We have AC.  He said all of the components that start up the unit were destroyed when the power went out.  He had the parts on hand and.. it’s already cooling down in here.  

As for the stove, I confessed. I told him that we got the stove to work as long as we unplug the battery charger and room freshener from one of the GFI outlets in the kitchen.  (There obviously is an electrical issue which we will address later.  For now, we unplugged the two items).  

He was thrilled the stove worked. He said he had to go help other customer’s who’s AC is out, in this 100 degree weather.  As he walked out the door he turned, smiled and said, “No worry about the stove, I have other “fish to fry.” 

Hahaha.

Fears of selling on eBay?…Gone!…

As a relatively experienced online shopper, I have kicked myself over the years for not attempting to “sell” anything on eBay.  Often running across items I no longer use or like, I have thought “why not put this on eBay and get rid of it.”

Wrongfully, I assumed it would take more time to take the photo, upload it, write the item’s description, find an appropriate box with bubble wrap, prepare the label for shipping subsequently taking it to the post office, to make it worth the few dollars I’d make.

With over three months until our estate sale, I thought, why bother?  

Well, this week, I succumbed to the eBay selling frenzy, selling three items this week for a total of $139 less the $12.65 I paid for the free shipping I offered with the “Buy It Now” prices.   
The “handling” of entering the three items to eBay’s website, the packaging and postage prep required a total of 18 minutes of my time. With a  few calculations I tallied my average earnings at $421.17 per hour!

Here’s how they sold so quickly:

  1. The pricing for the items was determined by checking recent sales of the same items on eBay that were also “used.”  I decided to go slightly under these prices and offering “free shipping.”
  2. Researching the items at the manufacturer’s websites, I copied and pasted the photos and descriptions to ensure I accurately represented the items.  
  3. In a matter of a few minutes, the items were uploaded and active.
  4. The next morning, I received an email from eBay telling me the “Buy It Now” items had sold and was paid by the buyer of course, for the prices I had asked.  (Why didn’t I let the items go via an auction?  Simple, I wanted to spend as little time as possible paying attention to an ongoing auction, and I wanted to sell the items for my competitive asking price).  In the email from eBay, I was able to follow a link taking me directly to the printing of a mailing label.  All that was required of me was to weigh the items on my kitchen scale in the packaging materials and posting it online.  EBay subsequently calculated the price of the postage using USPS, my preference. My PayPal account was debited the cost of the postage with no mark-up.
  5. Printing the label on plain white printer paper, I taped it with shipping tape to the boxes I happened to have on hand, sealed the packages and took them out to my mail.  When I listed the items, I had arranged with my mail person to take the prepaid packages thus avoiding a trip to the post office.
  6. Within three days, I received another email from eBay stating that the total funds of $139 were now available in my 
    PayPal account.

Responsibility travels well…

Life is filled with responsibility.  There’s no escaping it.  It goes wherever we may go.  Self discipline is the driving force to commit us to responsibility.  

Some have asked if we will have a sense of freedom, leaving behind work, finally both retired, of the day to day responsibilities of the upkeep and maintenance of a home, a lifestyle we have clung to for decades and the love-centered responsibilities that come with the care and feeding of family and friends. 

Will we feel free and unencumbered by “stuff” that for us, as for most, dictates the tone of our daily lives?

The answers to these questions are yet to come from the upcoming experiences in our near future. It’s easy to speculate as to “how” one will feel when a certain scenario transpires. Anticipation in itself is often fodder for disappointment. How do we temper it?

Perhaps, by facing the responsibilities that will follow us around the world. These thoughts are not in an effort to dampen our enthusiasm. It is to maintain a level of reality that essentially will give us peace of mind that will ultimately enhance our experience.

Loaded with tasks to complete before we leave, we must gather the list of that which will carry with us, not in our overloaded luggage but in our minds and on secure Internet storage. Here are some of these:

  1. File income taxes each year in the same manner we have done while in the US.  Our long time accountant is prepared to do our taxes all via email and documents forwarded to him by our upcoming mail service with our direction.  He will file electronically (as we’ve done for years) and our refund will be deposited in our bank account.
  2. Handle all snail mail through our mailing service.  They will send us a daily list of mail and will scan and email anything of importance.  They will snail mail replacements debit/credit cards and packages for a small fee plus postage.
  3. Apply for necessary visas and maintain second passports. Second passports are necessary in order to submit a passport with each application for a visa.  We don’t want to be in a foreign country without passports in our possession at all times. Second passports must be renewed every two years in the US.
  4. File insurance claims and stay updated on policy changes as to coverage while out of the US.
  5. Handle prescription refills.  We are still awaiting a response for our prescription plan as to providing us with one year of refills at a time. 
  6. Stay updated on both business and personal email/Skype. Email and Skype will be the primary sources of communication with our family and friends. Tom and I are both diligent checking email and will continue to do so provided we are able to receive an adequate connection.  If we have a problem, we will seek out other local Internet resources frequently.
  7. Seek out health clubs at each location.  In Placencia, Belize, there isn’t a health club!  There are hotels with adequate facilities and also private trainers.  As soon as our bags are unpacked, I will be on a mission to establish a relationship with a facility to ensure I can maintain my current level of fitness.  The walking we will surely be engaging in will not be a strenuous enough activity for me, although it may be adequate for Tom.  
  8. Find a dentist every 6 months. Tom and I are diligent about daily flossing and having our teeth cleaned every six months.  As the time nears, we will ask the locals for reliable dentists in the area, paying out of our pockets. Our dental plan will be useless abroad.
  9. Arrange vision exams every two years.  Tom’s family history of serious eye disease and blindness require exams by an ophthalmologist every two years.  Overall, we will be living in remote areas around the world.   Taking the time and bearing the expense to seek out quality care will be a prerequisite.  My vision issues are typical age-related, remedied by mono vision contact lenses.  I have packed a two year’s supply.  Tom will have eye exams and new glasses before we leave the US.
  10. Family members birthdays. All these years we have given gifts to our grown children and grandchildren at the time of their birthdays.  For the future, our gift to our adult children will be occasional plane tickets to visit us for a “free” vacation.  As for the grandchildren, Amazon will be our friend and theirs, where we can purchase gift cards, allowing them to choose something fun from Grandma and Grandpa each year on their birthdays. 
  11. Trip planning.  We have yet to book beyond the arranged 949 days from October 31, 2012.  As the time nears, it will be necessary to book airfare, train travel, ferries and auto rentals. There are some holes in our itinerary that we are holding for the five cruises we want to book that are not posted as yet. Once we are a year out, we will be able to complete some of these bookings, sooner rather than later. Neither of us are “last minute” planners. (As you can see)!
  12. Food shopping. Our special dietary needs will be a challenge wherever we travel.  Finding gluten free, sugar free, wheat free, grain free, starch free, low carb foods will surely be a challenge. Here is another mission for us as soon as we unpack.  If we can find grass fed beef and pork, free range chicken and eggs, wild caught fish and organic vegetables, we will be able to enjoy our meals. We use Greek yogurt, almond flour, coconut flour, coconut oil, unsweetened coconut milk, real butter, spices and Stevia. If these items are available, we will be delighted!  
  13. The constant tracking of all of our expenses. Every receipt and all cash purchases will be logged daily in our expenses spreadsheet to ensure we are staying within our budget.  If necessary, adjustments will be made if we are over the budget to cut back and cover the shortage over a period of months if necessary.  If we are “under” we may choose to dine out more often or upgrade to first class when we have no alternative but to fly. (We are bringing a tiny portable scanner and printer in order to scan receipts, making it unnecessary to haul the receipts with us for years. The printer will provide boarding passes and other documents as needed).
Yes, this list could be overwhelming.  Here in the US, its familiar and a part of our everyday life. From afar? Maybe not. We can only look at these responsibilities with optimism and a sense of challenge, rolling it all into the adventure, chipping away at it, as we go.

As they say, “You can run but you can’t hide.” Hum…

Bite sized pieces….

My feet hitting the floor at 5:40 am, a surge of energy running through me, I rushed around the house performing the morning’s usual tasks.  

The bath water ran while I turned on the teapot, emptied the dishwasher, threw the sheets in the wash, folded a load of laundry, checked my email and looked in refrigerator contemplating tonight’s dinner.  

The tub was full. Time to get ready for the day. Having worked for 45 years, I can put myself together in 20 minutes, providing I don’t get distracted stopping to watch the news story of the day on the TV in our room.
By the time I got the sheets into the dryer for the 70 minute cycle, I found myself walking in circles around the house, my eyes scanning the cupboards, the drawers, the closets, filled with the “things” of our lives, yet to be tackled.  I felt my heart race; a little bit of fear, a little bit of angst, a tinge of sorrow. 

Letting go? Letting go. Day by day. “Bite sized pieces” keeps running through my mind, the words I used daily to remind my precious sister Julie to hang on as she went through lengthy and agonizing breast cancer treatment about 4 years ago. She survived, thank God, with  a level of grace that I so admired and with a hope for the future, that has proven to serve her well.
Of course, there is no comparison with these life events, but the simplicity of thinking in terms of “bite sized pieces” has a magical way of putting our apprehension and fear in perspective, allowing us each day to bite off a little piece of the challenge while continuing to deal with it, day after day. 

I keep reminding myself of the upcoming sense of freedom and adventure facing us.  But now, with 3 months and 23 days to go, the reality of the looming tasks, many of which are too soon to complete now, I could easily  throw myself into a tailspin.  
Taking a deep breath, I don’t choose the tailspin, thinking, “What can I bite off today to lighten the load?”

We have found as we age, our ability to handle challenges changes. Somewhere along the way, both Tom and I have accepted that emotional upheaval is pointless, “drama” is used to elicit a response from others, stress is damaging to one’s health, and loud vocalization (yelling) to those you love (or not) doesn’t solve problems but creates them. Again, simple, again magical with the ultimate goal of contentment, entirely attainable, not at all elusive.

At 8:30 am, I packed up our six year old grandson Vincent, driving him to Gale Woods Farm for his second of five days in “farm camp” a short jaunt from our home. Three hours later, having completed multiple errands, I returned home, feeling a sense of accomplishment for having taken several “bite sized pieces” out of the daunting tasks that are looming. Walking into the familiar smells in our home; remnants of last night’s dinner along with the orange organic cleaner I used this morning to clean the kitchen, a wave of accomplishment washed over me.In only a few short months this life as we’ve known it, will be over with a new life to begin its place. We’ll continue to take “bite sized pieces” with contentment, joy and wonder as our ultimate goal.

Looking around the house at the cupboards, the drawers, the closets and the “things” I knew it will all get done and, it will all be OK.

Tested for resourcefulness?…Recipe for easy to make coconut shrimp plus gluten free version…

Yesterday morning our eight year old Viking range quit working. It blew the circuit breaker when I turned on the downdraft. Most likely, it’s an electrical issue.  

With an appliance repair plan in place with Centerpoint Energy, I couldn’t call quickly enough.  With the outrageous heat these past few weeks, they were swamped with air conditioning repairs.  The next available time slot was Monday, July 16.  Oh no!  

“What do you mean I won’t have a *&*$%*#@ stove!  How will I cook?  Eight more days?

Friday evening, we heard from two separate couples, dear old friends, we hadn’t seen in a while. Ironically, both of these couples had stumbled across our blog and were inspired to touch base. 

When the first couple called, we invited them for dinner last night, subsequently turning down the second couple who had invited us for dinner only minutes after we invited the first couple.  We love visiting with friends.  We’ve been busy. They’ve been busy.  Life happens.

Smiling, in anticipation of a fun evening, I wandered off to the kitchen to make Tom and I our usual low carb, sugar free, gluten free, grain free and starch free breakfast: eggs, sausage and coconut flour pancakes with Walden Farms sugar free syrup.  

I turned on the Viking stove top with the 24 inch griddle on which I usually make this entire breakfast and on which I would be cooking the dinner for old friends later in the evening.  I turned on the griddle I got power, then a switch short circuited and there was no power.  

Calling out to Tom while he was enjoying time in his comfy chair, reading the Saturday paper, he jumped up to help (Oh, good grief! How stereotypical we are)!  He never uses the stove, knows nothing about the stove, but I always call out to him when something doesn’t work. He came running to no avail.  “Call and get an appointment.” he says and,  “we’ll need to cancel dinner.”

Cancel dinner?  Huh?  Call our dear old friends and “un-invite them?”  No way! I told Tom I’d cook the breakfast in the oven. If it turns out, I will figure out how I will make a lovely dinner without a stove.  

You may think, why not use the Weber grill?  Simple answer. We live on a peninsula. When the winds blows our Weber grill often ends up in the lake, the big black lid bobbing along the shoreline. It always seems to float back home.As a result of “its” life experiences, I have little interest in cooking with its banged up body and lid.  We replaced it several times over the years and finally gave up especially now that “THEY” say grilling may not be so healthful.

As for breakfast, I preheated the oven to 400 degrees, baked the sausage and the coconut flour pancakes (used the muffin top pan for perfectly round pancakes) for about 15 minutes, baking the eggs during the last five minutes using the dull side of the Reynold’s nonstick foil (coupon here). Much to our surprise breakfast was perfect! Timing was everything!

Now what’s will we make for dinner for company?  After two days in the kitchen this holiday making food for July 4th, I had little interest in coming up with a complex menu and spending hours preparing a meal. Now that I had no stove, I went rummaging through the freezer to come up with ideas.

Here’s what we decided on preparing without a stove, considering all the ingredients we had on hand:

  • Cauliflower, green onions, bacon and almond salad with homemade sweet and sour ranch dressing (I cooked the bacon in microwave)
  • Marinated pork tenderloins (oven prepared)
  • Grass fed burger patties (oven prepared)
  • Gluten Free Coconut Shrimp with spicy blackberry yogurt dip (deep fryer)

Jess’s Coconut Shrimp
Jess’s Coconut Shrimp with Gluten Free Option24 large fresh or frozen shrimp (if frozen, thaw quickly in a bowl of tepid water)
1 cup regular white flour (or for gluten-free diets: 1/2 cup rice flour + 1/2 cup cornstarch)
2 tsp baking powder
1/2 tsp salt
1 tsp. Cayenne pepper
2 eggs
2/3 cup ice water, or cold water
1 cup dry shredded unsweetened coconut (baking-type)

2 cups coconut oil or other high-temperature oil for deep-frying

1. Remove shells from shrimp, but leave tails on for easier cooking and eating. Set aside.

2. Make the batter by first mixing the dry ingredients together: flour, baking powder, salt, and cayenne pepper.

3. Crack the egg into the flour mixture, then add the water, stirring to break the yolk and form a fairly smooth batter (don’t worry if there are a few small lumps).

4. Spread coconut over a plate or other dry surface, and set beside the bowl of batter.

5. Holding the shrimp by the tail, dip into the batter, then into the coconut. Place on a dry plate or a clean space of your counter near the stove. If you have a helper, you can batter and fry the shrimp in one step, which is much quicker.

6. Pour oil into a frying pan, ensuring it’s at least 1 inch deep. Set over medium-high to high heat. When you see lines of heat snaking across the bottom of the pan, test the temperature by dropping a tiny bit of batter into the oil. If it sizzles and cooks, the oil is ready.

7. Drop as many battered shrimp into the frying pan as possible at one time. Reduce heat to medium. Tip: You’ll want to cook the shrimp quickly, in just 1 or two batches (before any of the loosened shredded coconut has time to burn in the oil).

8. Cook about 20 seconds per side then turn with tongs. Remove from the oil when the shrimp turn a light to medium golden brown. Drain on a clean piece of parchment paper (I find parchment paper works the best, as it doesn’t stick to or tear the batter).

9. Serve hot straight from the pan, or accompany a sugar free sweet and sour dipping sauce.

The deep fryer was an issue. Since we don’t normally deep fry, we only had enough coconut oil on hand to fill it to about 1″ deep. The bottom of the fry baskets were raised 1″ from the bottom resulting in the baskets never touching the oil. The only solution I could see was to cook the shrimp around the edges of the heating element which could result in sticking and uneven cooking. Much to my amazement, they didn’t stick and cooked to a golden brown.

Our guests thoroughly enjoyed the dinner (so they said) and we were thrilled with our resourcefulness; cooking with no stove.

Lesson learned: Wherever we may travel, however basic the appliances or cooking utensils, we will find a way to prevent ourselves from starving and perhaps enjoy some innovation in the process.We are having more company for dinner tonight, our dear friend Sue; salmon, leftover coconut shrimp, steak, salad and veggies. Easy peasy.

After another “oven baked” breakfast this morning, I started gathering items for Tom’s lunch tomorrow. By rote, I poured water in a pan, gently placed six eggs in the pan and turned on the stove. Poof! It started! Go figure.

Memories, old and new yet to come…

The 4th is over. The house is cleaned of the chocolate flag cake little hand prints and the freshly cut grass covered little feet.  The dog nose prints on the glass are gone, the kitchen cleaned from my “bull in a China Shop” food preparation, food flying everywhere.  

The leftovers are almost gone with only one more night of tender barbecue ribs, almond flour fried chicken and crunchy broccoli salad.  There’s one more piece of the gluten free cake for Tom to enjoy tonight after a 12-hour day of hard work in the heat. I look forward to placing it dead center on a his favorite white plate and handing it to him while he cools off in his comfy chair, TV in the background, Ancestry.com loaded up on his laptop, ready to go.

Tom doesn’t like for me to “wait” on him. He never asks me to get him anything. For me, it has become less of a gender role, but more of a being a caring and responsible partner in life, holding up my end of the deal. Retiring almost two years ago after 45 years of work I find my new “job” of homemaker, cook, blogger and travel planner rather rewarding.    

I do laundry every day, washed, folded and ironed if needed.  Each night, Tom took out his clothes for the next day’s work invariably choosing the same already washed and dried shirt among a dozen others, one that he wore the prior day.  

I asked him last night if his co-workers noticed that he rotated only two shirts. He laughed, saying, “Guys don’t notice other guy’s clothes unless they are particularly unusual or fodder for endless jokes.”  His two shirts are relatively boring.  He’s not.

This morning as I padded around the kitchen, almost running in circles, I anticipated my big activity for the day; lunch with my old friend, Lynda of 36 years at Maynards in Excelsior situated on Lake Minnetonka, where she and I hung out in the 70’s (when it was known as T. Butcherblocks). We’d skillfully maneuver our big boats up to the dock, tied them up, and proceeded to order copious amounts of sweet drinks with umbrellas, later dancing into the night in the upstairs bar, chasing boys. 

Both boat owners, we were proud to be women who could manage our meticulously cleaned and maintained 25+ foot cabin cruisers into a tight slip in “the front” of the dock, later heading home to our growing kids, our hard earned homes, our booming business and the responsibilities of the day. It was fun. We were young.

As we meet today to discuss our lives, she with her second husband, me with my third, we’ll surely chuckle over the changes in our lives; our grown kids, our grand kids, she and her husband Jim, living part time in China with two homes in California and now a home on Lake Minnetonka and, us on our path of seeing the world. We’re both digging into our “bucket lists.”

We both still work out almost every day, as we did then, enjoy healthy food, take care of ourselves and grumble over the ravages of time that inevitably heads our way.  We accept that reality of aging as gracefully as we can. We both still relish a “cute” outfit and a brag-worthy bargain on a sexy pair of high heeled shoes, comfort being more of a prerequisite than it was in the past. 

Life has never been easy for either of us, as for most. We worked hard for what we wanted and fumbled along the way. We experienced sorrow, health issues, disappointments and failures. We survived. We still know the words to Gloria Gaynor’s, I Will Survive, popular in our “day.”

It will be a lovely lunch, seeing an old friend, sharing our lives, ordering the delicious Seared Ahi Tuna Salad that I always order at Maynards, reminiscing about the past, anticipating the future that we both share in common in so many ways.

Later, when I return home, I’ll squeeze into a bathing suit spending a little time getting my usual hour’s worth of Vitamin D, finish a load of wash and anxiously await Tom’s return home.   I’ll pour him a cold glass of sugar free iced tea and set out the white plate for him to enjoy the last piece of the gluten free chocolate flag cake. 

I’ll ask him no less than three times if he’s ready for his cake and smile when he finally says “yes”, springing from my comfy chair to get it for him.  

He never asks for me to get something for him, which occasionally makes “waiting” on him, all the more meaningful.

Hot today!… Happy 4th!…

Here it is, our last 4th of July in Minnesota, except for perhaps a time in the future, when we’ll return to visit family and friends.  It’s a mixed bag of emotions.  

Tom set out the 200 plus flags along both sides of the peninsula on Sunday as we’ve done for over the last two decades, boaters driving by waving at us for our festive display.  Fortunately, there were no storms, these past three days that may have blown them away.

Yes, it hurts to leave all of this behind. It’s sad to leave our three adult children, their significant others and six grandchildren who live nearby.  We’ll miss them and we’ll miss all of our relatives, neighbors, friends and co-workers we’ve come to love after all these years.  We’ll no longer be Minnesotans.

With our new upcoming residency in Nevada, where eldest son/stepson, Richard lives in Henderson with our funny grand dog, Monty; my eldest sister living in Boulder City (25 minute drive); and dear old friends also in Henderson, we won’t be lost making Nevada our new address. 

Nevada offers many retiree benefits of which we’ll partake. Change is not easy, especially as one ages. We worry about finances, health, available services and basic creature comforts. We long for a certain sense of familiarity to bring us comfort and peace.

In a short time, we’ll take a risk with our health, exposed to disease in strange lands. Although we’ve carefully planned, some of our funds may be at risk at times, less services (dentist, doctor, vision care) will be available to us and we will forfeit the familiarity that brings us comfort and peace.

For today, we’re heading outside to enjoy the sunshine, the heat, the flags, the festivities, the great meal we’ve prepared, and the people we love. Have a happy day!

Jackets..too hot…too cool?

Our mission to find the appropriate jackets for our adventure is yet another challenge.  Here in Minnesota, a heavy winter coat is appropriate from November to May.

Tired of wearing coats all winter, I have preferred to bundle up with sweaters the remainder of the year, currently not owning any lightweight jackets suitable for travel.  Tom, on the other hand, has a few older lightweight jackets and, although still in reasonable condition are not ideal for our upcoming long term travel.

Buying clothing while still here in Minnesota has been a vital aspect of our preparations for our three plus years on the road.  Minnesota has no tax on clothing and shoes, saving us as much as 8%.  Also, buying online with deep discounts and/or free shipping has also saved us a bundle.

A perfect example of these savings came as a result of my getting “points” from the company Earndit, only yesterday when I redeemed 1000 points I accrued from wearing the BodyMedia exercise armband for the past 18 months, now to be replaced by my new “wear on body” exercise device, FitBit which also accumulates Earndit points.

Both of these devices have kept track of my activity levels, steps, calories, burned, and quality of sleep.  (I discussed this device in a prior post).  Recently, I replaced the BodyMedia with the FitBit with the goal of eliminating the $6.95 monthly membership fee required by BodyMedia.

Sure, I spent $75 on eBay to buy the FitBit but, in less than 11 months, it will pay for itself.  Also, I must admit that convenience played a role in this decision. The BodyMedia is worn on the upper arm often eliciting annoying inquiries as to its purpose. FitBit is worn inside one’s clothing attached to undergarments, making it entirely invisible.

Yesterday, while we were sitting in our comfy chairs, taking a short respite from the heat outside, I redeemed 1000 of my 2500 points at Earndit for a $100 gift card to RailRiders to be redeemed with a $175 or more purchase.

I purchased the Men’s Insect Shield Pants for $98 and the Women’s Insect Shield Pants for $89 for a total of $187 plus $7.95 shipping for a grand total of  $194.95.  Using the $100 coupon, I paid $94.95 for an average price per pair of $47.48.

Thrilled that my daily exercise monitors afforded us each an additional pair of pants, I am now ready to commence my search for jackets now we otherwise  have enough clothing for the upcoming eight months in Africa. 

Since we plan to bring only one jacket each they must serve us well throughout the world. The requirements for jackets include:

    • Lightweight, comfortable
    • Attractive
    • Waterproof
    • Lots of pockets
    • Hood
    • Removable sleeves, if possible
Sound easy.  However, I’ve spent no less than four hours researching online to find only one manufacturer, Scottevest that may fit the bill, except for this fact: the lightweight jackets are not so attractive. Tom wants a jacket that has a safari look and I agree. We love all the pockets in their jackets but, the look, not so much.  

Most would say, “who cares about looks when function is the key?”  If one is going to be wearing the same clothes, day after day, month after month, year after year, it’s not a bad idea to like it!  (Not too dissimilar from our “liking” one another).

Last 4th of July!

Flag cake is easy to make: white or chocolate cake mix,  Cool Whip or whipped cream, sliced strawberries and blueberries.  My small hand skills are limited, but the grand kids don’t notice the imperfections.

How odd it is. Our last 4th of July. It dawned on me today that many holidays we celebrate here in the US, won’t be celebrated abroad. Duh! No 4th of July. No Labor Day. No Thanksgiving. No President’s Day. No Memorial Day. 

With our intent of blending in while learning the culture, we’ll make every effort to embrace those national holidays that are befitting our personal beliefs and respecting those that are not.  

Thanksgiving cooking was tough last year. I prepared an entirely gluten free meal including GF Coconut Flour Biscuits, GF Homemade Croutons to make GF Turkey Dressing, GF Almond Flour Gravy and GF Nut Crust for the sugar free GF pumpkin pies. (We had to ditch the traditional green bean casserole.  There’s no good substitute for those canned onion rings!)  

Before Thanksgiving, I’ll post some of these recipes for anyone who may be interested.  Tom didn’t love everything.  He has picky taste buds..  I can eat my shoe, enjoy the taste and digest it with nary a belch. Not picky. I ate all the leftover GF items for days while Tom nibbled on the turkey and the GF broccoli salad.  After the fourth pumpkin pie, I was done. We won’t miss the Thanksgiving meal so much.

Now, as the 4th of July approaches, the plans and menu are in place.  Here’s the menu.  Recipes follow for the starred items.

Luckily for both Tom and I, most of these recipes are gluten free, except for the cake and cornbread.  Also, we gave up corn and all its products last August after reading the book, Wheat Belly by Dr, William Davis to discover the way corn has been genetically manipulated to increase production, stripped of nutrients and loaded with chemicals.  That was a tough one to leave behind.  

Our friends and family still eat corn, except for daughter Tammy and her family. (The rest of them have grown bored with my endless food warnings soapbox so I finally stepped down, preaching only to dear Tom who acts like he’s listening).The salsa recipe is easy to make and often a crowd favorite.  Here it is:

Jess’s Salsa
2 – 28 oz. cans of  Italian style whole tomatoes, save juice, chop tomatoes (I used to use fresh tomatoes, but unless they are home grown, generally those at the grocery store are relatively tasteless) 

1 large bunch cilantro, cleaned, chopped 

1 large onion (Vidalia is available now)

2 jalapeño peppers or a small can of diced hot jalapenos

3 cloves fresh garlic 

4 T red wine vinegar
Add juice from cans
Add salt and pepper
Add juice from one large lime or two small. Refrigerate overnight for best flavor. Keep chilled in jars for one week in the refrigerator.
My mother, Sylvia (may she rest in peace) was a quirky woman but, a fabulous cook.  Much to the surprise of other good cooks, she didn’t like to share certain recipes.  This cornbread was always a huge hit among those fortunate enough to try it; moist, sweet and flavorful.  

She didn’t give me the recipe until I was 30 years old, old enough to keep the “family secret recipe.”  She made me promise not to give anyone the recipe in “her lifetime.”  
When she passed away in 2003, my friends were chomping at the bit for the recipe which I gladly shared.  Here it is! If you take the five minutes it takes to dump these ingredients into a bowl, stir well and keep an eye out with a toothpick while it bakes, you and your guests will experience the best tasting cornbread on the planet! 
Jess’s Mother Sylvia’s Secret
Cornbread Recipe
2 cups Bisquick½ cup yellow cornmeal

1 cup sugar

Mix well

Add:

2 eggs

1 cup milk

1 stick melted butter (1/2 cup)

Pour into a 9” baking pan
Bake at 350 degrees for 35 minutes or until done when a toothpick is inserted.

Enjoy!

 
Tom and I don’t eat this due to the cornmeal, sugar and Bisquick.  The smell while baking in itself is quite intoxicating, reminiscent of another time.
Tomorrow, Tom will place our traditional 200 small flags along both sides of the peninsula.  

We’ll take out our red, white and blue hats, leis, tee shirts and serving pieces. We’ll celebrate the 4th of July with the same fervor we have each year, watching the boat parade at 7 PM, tossing water balloons, making giant bubbles and sitting at the end of our dock at dark to watch the head turning five fireworks displays all at once.   Bittersweet!  
Next summer on June 2nd, while living in Tuscany, we’ll celebrate the Anniversary of the Republic or on August 15th, Ferragosto.Bye, bye, 4th of July!

Not roughing it…

We aren’t backpackers. We aren’t hikers, mountain climbers, white water rafters or campers. Maybe, just maybe, we’re zipliners. We like air conditioning, iced tea with lots of ice, salad with dinner, fluffy bath towels and 600 count Egyptian cotton sheets. 

Oddly enough, we don’t care for sightseeing.  We force ourselves to go to the Minnesota State Fair, every three or four years, rarely trying any of the overpriced, unhealthy “things on a stick.”  

We seldom go to the movies, instead preferring to watch it later “On Demand” in our own time, sitting in our comfy chairs while enjoying a low carb, gluten free homemade dessert.

But, we do like the laughter of our grandchildren running wildly through our house, the smell of my mother’s recipe for pot roast slowly baking in the oven on a cold day, sitting at the end of the dock watching the bottom feeder fish jump into the air on a warm summer night before the mosquitoes start biting.

We love entertaining family or friends for brunch or for dinner, serving foods we know they’ll like, befitting their “diet of the week” or special dietary needs. We love the ease we feel whether preparing an awe inspiring gourmet meal or simply burgers on the grill.

We love the well-fed and appreciative smiles on our guests faces as they finally go their way, giddy from the copious glasses of good wine, good food and the constant laughter.

We love nature; the cardinal alighting on a branch, the white albino squirrel leaping from tree to tree, a miniature red cedar sapling growing in the stone patio or the spunky yellow day lilies that bloom every year with so little care.

We love the fluffy white pillows created from the falling of fresh snow when we know we can stay inside, feeling that special sense of comfort that we Minnesotans somehow find so familiar and peaceful.

Will we see the Sistene Chapel?  (Last week, a young pop star on David Letterman’s show referred to it as the “Sixteenth Chapel! Hahaha!).

Maybe we will, depending on the crowds, our mood, the weather, the convenience. But, we’ll walk with the locals and their chickens along the road in Tuscany to the outdoor market each day to buy fresh brown eggs and freshly picked brightly colored pesticide free produce. 

No, we’re not backpackers or sightseeing fanatics. We’ll be two 60 something retired people living an ordinary life, that are easily entertained by simple pleasures, many of which will change, many of which won’t be available and many of which will be new or different.

As long as we can breathe the fresh air, be a part of Mother Nature’s bounty, mingle with the people and their way of life, have a comfortable place to sleep and a couple of comfy chairs or sofa, we’ll only enhance the joy we’ll have carried along with us, not in our overloaded suitcases but, in our hearts.
